How To Make It

There are really only 3 steps to making this dipping sauce .

Step 1 Peel the shallots and place them in a food processor with the pineapple rings and garlic cloves. Process until the onion has been chopped until it is approximately the size of grains of rice.

Step 2 Place the chopped onions and pineapple in a saucepan with the rest of the ingredients. Cover with a lid, bring to a boil, and then turn the heat down to a simmer. Leave for 30 minutes, then remove the lid and leave to simmer uncovered for 10 to 15 minutes until this mixture is thick and glossy.

Step 3 Allow the sauce to cool and then transfer to a clean sterilised jar. Store in the refrigerator for up to 2 weeks. If you prefer a smoother sauce, blend with a stick-blender.

  • Non-roasted garlic personally, I find roasted garlic gives this sauce the best flavor, but if you really dont have time, or cant get good quality fresh garlic, the jars of pre-minced garlic will work. I would use between 1 and 1 1/2 Tbsp.
  • Alcohol-free even though the vast majority of the alcohol is cooked off during the reduction process, I understand some of you may not be able to use alcohol. The good news is, you can simply omit it and replace it with an equal amount of water.
  • Light brown sugar if you dont have dark brown sugar, light brown sugar will work just fine. The sauce may be a little bit lighter in color, but should still taste great. You could also add a drizzle of molasses to the sauce, which would mimic the molasses-y flavor of the dark brown sugar.
  • Solution for sauce not thickening even though the sauce should reduce by about half during the simmering process, if you find its still too thin for your tastes, you can mix together 1 tsp of cornstarch with 1 1/2 tsp cold water, then stir that into the sauce as it simmers. Be aware though, like most sauces, as it cools, it will thicken a bit more.

Making Whiskey Glaze Ahead Of Time

As with most sauce or glaze recipes, you can absolutely make this recipe ahead of time. It will keep for up to a week in the refrigerator .

You can also prep it ahead by roasting the garlic, chopping the onion, measuring out the brown sugar, etc.

The biggest time saver when prepping ahead, is roasting the garlic. This can be done several days in advance, and saves about 40 to 50 minutes of time.

    Jack Daniel’s Sauce – TGI Friday’s Style

    This one is very similar to the one you will find at any of the many TGI Fridays across America.

    For us up here in Canada where we dont have this restaurant chain but love the goodness of their sauce, you can now make it at home!

    Barbecuing can be year-round even in our cold climate especially if you do the ribs as we do.

    We like to cook the ribs slowly in the oven, 300F for 3 hours on a rack above a water bath covered tightly with foil. Here is the recipe on our BBQing With The Nolands site.

    We cook them until they are almost falling off the bone then seasoned and slathered in sauce and finished on the BBQ. Delicious!! I find this glaze is best with ribs but you can also try it with chicken, turkey, salmon, steak, burgers, pork, or whatever you like.
