How To Make Buffalo Wing Sauce:
To get started, melt a half stick of unsalted butter in a saucepan:
You can also melt it in the microwave instead, if thats easier for you.
Next add Franks, and the exact one you want is Franks Red Hot Original Cayenne Pepper Sauce.
They sell quite a few varieties, but its this original one that you want in particular:
Next add worcestershire sauce. Only a little bit is needed:
Then add ground cayenne pepper to the buffalo sauce:
When you want more heat, always add more ground cayenne pepper instead of extra Franks sauce. Otherwise youll throw off the balance of acidity.
Whisk this all together until its emulsified:

Heres the pasta sauce dream: You, blanching and peeling tomatoes, then standing over a simmering pot as they cook down, garlic and onions and basil and thyme flavoring the sauce and perfuming the kitchen.
Heres the pasta sauce reality: You, standing in the supermarket aisle, choosing a jar, then dumping it on the pasta and giving things a toss. Maybe you go gourmet and grate some Parmigiano-Reggiano atop the noodles maybe you rummage in the cupboard for the Kraft.
But theres no shame in store-bought. Even chefs grab the Barilla from time to time. And by spending just a few extra minutes, you can give your sauce a homemade upgrade. Here are eight tricks:
Let it simmer. Simmer the jarred sauce in a pot or deep skillet, even for as little as 10 minutes. Simmering deepens whatever flavors the sauce already possesses.
Fresh or dried. Add chopped fresh herbs to simmering sauce or sprinkle them on top of your pasta, like ribbons of fresh basil. Dried Italian seasoning blend also enhances the sauce.
Just a pinch. A pinch or two of sugar supplies the gentle sweetness that would otherwise be provided by slowly cooked ingredients just be sure not to overdo it.
For a quick arrabbiata-style sauce, stir in a pinch of red pepper flakes.
Just a splash. Decent quality red wine and good quality balsamic vinegar do wonders to improve jarred pasta sauce. Taste, adding a little at a time, so you dont overpower the sauce.

Quick And Hearty Ground Beef Ragu
Provided by Mama Cee Jay
1 tablespoon extra virgin olive oil |
2 carrots, peeled and finely chopped |
2 celery ribs, finely chopped |
1/2 large sweet onion, finely chopped |
1 shallot, minced |
1/2 cup roasted red pepper, chopped |
32 ounces beef broth |
Steps:
- In a large stockpot or dutch oven over medium heat, saute the carrots, celery, onion and shallot for 4-5 minutes until softened. Add the minced garlic and saute for one minute longer.
- Turn heat to medium high. Move vegetables to side of pot and add ground beef in batches and brown. When all ground beef has been added to pot and browned, add Italian seasoning, crushed red pepper, salt, and black pepper. Thoroughly combine meat, vegetables and seasonings.
- Add crushed tomatoes, tomato paste and roasted red peppers. Pour some of broth into cans to clean out remaining tomatoes into pot. Pour remaining broth into pot and thoroughly combine with all other ingredients. Add more black pepper or crushed red pepper if you like it hot and spicy.
- Reduce heat to low and simmer until sauce has reduced to half or two thirds of original volume.
- Serve over your favorite pasta and top with grated cheese if you like.

Despite hours of simmering, I wasnt able to fully duplicate that long-cooked, slightly metallic tomato paste flavor you get with Ragu. Doubling or even tripling the tomato paste would get the sauce closer, if thats important to you. But then at a certain point, you should just buy Ragu, know what I mean?
So, this is not a full-on copycat recipe.
