Making Your Own Pasta

Turn Jarred Spaghetti Sauce into Liquid Gold | Cooking Light

If you want to try your hand at making your own pasta, I cant recommend it enough. Its not difficult or scary to make your own pasta.

Here is an incredibly easy homemade pasta recipe that only requires you to mix flour with eggs and knead the dough.

  • 2 large eggs
  • 200g of 00 flour, plus extra for dusting

Make a mound out of the flour . Swirl a whole in the middle of the mound with your fingers. Crack the eggs into the center of the mound.

Using a fork, beat the eggs gently, then start to incorporate the surrounding flour, slowly, until fully combined. Add the extra flour only if the dough is too sticky. Then knead the dough until its smooth and elastic.

Other Ways To Use Pesto From A Jar

You can use this herby, garlic-y puréed sauce to perk up just about anything.

  • Use it on a pizza base. Substitute tomato marinara sauce for green or red pesto and add your toppings as usual.
  • Add in salad dressings.
  • Toast topper. Add a dollop on top of your egg or mushrooms on toast for a hit of strong flavor.
  • Perk up your meat. Pesto packs a punch of flavor so you can add it to beef stew, roast beef, or chicken when the other flavors in the dish are lacking.

Modifying The Pasta Sauce

What if you need to thicken the pasta sauce from the jar? How do you do that? I cook it for a bit longer, as it will thicken as it cooks, but if that isnt enough and you still want it thicker, then you can add in a little cornflour. This is a great thickener that works so well, but you have to be careful how you mix it in. You should mix the cornflour in a small container separately with warm water. Stir it in until it is fully dissolved, and then mix that dissolved cornflour into the pasta sauce.

What about if you want to thin the sauce? If it is too thick, you can either add some thin pasta sauce to it or a little water. Be careful with adding too much water, as that can kill the flavour. Instead, just add a little at a time and then mix it in thoroughly to test if it is enough.

I like to add seasonings to the sauce when it is kind of bland, and that may mean adding in thyme, parsley, oregano, or salt. I may also make the sauce heartier by adding in mushrooms, onions, tomatoes, or green peppers. When adding any ingredients to pasta sauce, be sure to add them before you heat the sauce. That way, they cook with the sauce and help to spread their flavour out evenly and richly.

Keep in mind that anything you do add to the sauce may make it thicker. It could also add oils to the sauce, changing the texture slightly. In some cases, you will want to cook up your ingredients separately and then mix them into the sauce once both the sauce and the ingredients are cooked.

Simmer No Matter What

It may be tempting to spoon your tomato sauce onto your lasagna noodles straight from the jar, but simmering it on the stove for ten to twenty minutes will enhance the taste of your sauce because it allows water to evaporate, leaving behind a heartier, more tomatoey base. Heating your sauce on the stove also helps to release the flavor of any herbs or spices that are in the sauce already, so make sure not to skip this crucial, flavor-boosting step!

With these easy hacks, youll never be bored with store-bought tomato sauce again. Even more importantly, you wont have to worry that your family will shun you for disgracing grandmas famous sauce.

How To Make Spaghetti In Your Instant Pot

If youre still making spaghetti with jarred tomato sauce ...

Start with your Instant Pot on sauté mode and add the olive oil. Once it is hot add the onions and garlic and sauté for about 5 minutes. Stir often making sure they dont burn.

Turn off the sauté mode and stir in the kosher salt. Then pour in the chicken broth and scrape up and browned bits from the bottom.

Pro Tip: never skip scraping up the browned bits when using the Instant Pot. It helps prevent the burn notice.

Grab the spaghetti and break in half. Place the spaghetti in the pot in a crisscross pattern. This prevents the pasta from cooking in one large clump.

Do not stir the pasta at this point, just give it a light press to make sure that it is all touching the liquid.

Pour half the jar of sauce over the pasta, then sprinkle on the seasonings.

Close the lid and turn the pressure valve to seal. Set to cook for 2 minutes.

At the end do a 5 minute natural release. Finish with a quick release.

PRO TIP: It will look a little watery when you open the pot, dont worry, the starches from the cooked pasta will thicken it up while it cools!

Stir in the rest of the jar of sauce and toss the pasta. Let the pasta rest for about 5 minutes so it can thicken a little while it cools.

Taste for additional seasonings , then serve warm topped with parmesan cheese.

How Long Should You Cook Prego Sauce

Simply pour the sauce into a small saucepan while you re going about boiling your pasta. Let it come to a boil, then reduce the heat so that the sauce gently bubbles. Keep the simmer going for about 10 minutes or so, until you ve noticed that the sauce has reduced and thickened a little, but is still saucy.

How To Make Homemade Spaghetti Sauce

This recipe calls for a mixture of ground beef and Italian sausage. Using both adds additional flavor to the sauce. You can use any sausage or just plain ground pork. The seasonings you add will spice it up.

Combine both the beef and pork in one large skillet to save on dishes. Spread the meat in an even layer and allow it to brown before stirring. The browned meat gives so much additional flavor to the sauce.

Once the meat is browned on one side, add the onions and spices and stir it all up. Give it another five minutes, to meld together the flavors, then combine it with the tomatoes in a saucepan.

I prefer to make my sauce on the stovetop, but if you want to make this recipe as easy as possible, put all the sauce ingredients in the slow cooker, mix together, and cook on low for up to 8 hours, while youre at work.

On the stovetop, simmer the sauce for anywhere from just a few minutes to 4 hours, depending on how much time you have. The longer it simmers, the better the flavors will be.

Once the sauce is ready, you just have to combine it with your pasta and serve. Some people think you should spoon the sauce over the top of the pasta, but I dont think that makes the best plate of pasta. Combining the pasta and sauce in the saucepan gives the sauce a chance to stick to the pasta before serving.

Finally, use a microplaner/shredder to shave a bit of shredded Parmesan cheese over the top for a final boost in flavor.
