  • 3 cloves of minced garlic
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Toss the arugula, cherry tomatoes, toasted pine nuts, and parmesan cheese slices in a large bowl. Make the dressing in another bowl by mixing extra virgin olive oil, lemon juice, honey, minced garlic, salt, and pepper. Pour the dressing over the salad, and finish with the shaved parmesan cheese and a sprinkle of black pepper. Serve this with your spaghetti dinner.

  • For a thicker sauce, allow it to simmer on the stove without the lid. This will cause the liquid in the sauce to evaporate.

To Freeze: Prepare recipe right up until the baking step. Cover well with greased aluminum foil and freeze for up to 3 months.   • Season with salt and let beef brown nicely on bottom.
  • Crumble beef: Then begin breaking beef up . Let it continue to cook until it has cooked through .
  • Drain beef: Transfer browned beef to a paper towel lined plate, leave about 1 Tbsp fat in pan. Or add 1 Tbsp olive oil.
  • Saute aromatics: Add onion and saute 4 minutes or until almost softened, then add garlic and saute 1 minute longer.
  • Add other ingredients:stir in crushed tomatoes, tomato paste, water, beef, basil and oregano. Season with salt and pepper to taste.
  • Simmer sauce: Bring to a light boil, then reduce heat to low , cover with lid and let simmer until onions have softened through, about 15 minutes.
  • Adjust consistency as desired: If you have more time let it simmer longer. Thin with a little water as needed, thicken with a little tomato paste as needed .
  • Finish with cheese: Stir in parmesan at the very end and let melt through. Serve over pasta of choice topped with more parmesan and parsley.

This clever cooking hack can be used in a variety of homemade pasta sauce recipes, and its not much different from seasoning with a touch of salt.

How To Thicken Spaghetti Sauce

Why is this homemade spaghetti sauce rich and just the right thickness even though it is meatless? Here are a few things that make a difference:

  • Add finely chopped or grated vegetables. This is another great reason why I love adding finely grated carrots. Not only do they add natural sweetness to the tomato sauce, but they also thicken the sauce and give it a nice body.
  • Use the right kind of canned tomatoes. Many recipes will use tomato sauce. That’s fine, but if you’re after thicker consistency, canned crushed tomatoes will give you a better result. And like I said earlier, something I don’t always add is a couple tablespoons of tomato paste which could also help.
  • Do not add too much liquid. In this recipe, I use about ½ cup water earlier on to get things going. Later, I watch the sauce as it simmers and I add a little bit more if needed .
  • Simmer the sauce. You’ll notice that once the sauce boils briefly, I turn the heat down and let it simmer a good 20 minutes. If I’m not in a hurry, I leave it a few extra minutes, watching the consistency and adding liquid if it turns too thick.
  • Other ways to thicken the sauce. Not used in this recipe, but you can also use a little bit of corn starch or even add an egg to thicken the sauce . I don’t use either of these methods in my recipe because it is just the right thickness for me.
