Praise the Lord almighty, I got some sleep last night. A whopping 7 hours. Im a whole new woman. It was getting dicey there for a while. And while it was dicey, I did something dumb like read the internet about why I wasnt sleeping. Apparently, I have issues. According to one study at least.

And my wonderful coworker decided to instill that added level of paranoia into my life. This is probably what started the sleepless nights, me over analyzing every cup of coffee that dripped on me EVER.

My coffee was still a bit warm when I went to make this for I popped it in the freezer for about 10-12 minutes, checking it fairly regularly to make sure that it had not frozen.

    Pour caramel syrup into the coffee.

    The method for making your coffee is important, but the most important part is the coffee itself. There are three basic things to consider when choosing a bean for your iced coffee:

    • Where it came from
    • Its roasting level
    • Its grind consistency

    Youll also want to consider the roasting level of your beans, as this will affect the final flavor. Roasting is done in four intensities light, medium, medium-dark, and dark that produce more intense flavors as you go down the scale. Since some of the coffee flavors are dampened by the cold, youll want to go with a medium roast. You can use medium-dark or dark roasts, but you will get a bitter aftertaste.

    How To Store Homemade Caramel Sauce

    When it comes to storing caramel sauce, its all about moisture control. Too much air will dry it out, while too much moisture will cause the caramel sauce to sweat and make it all gooey. When the caramel sauce cools, it will get very thick. Store it in a heat-resistant and airtight container such as a glass mason jar.

    You can also store it in a glass microwave safe bowl with a lid. You can leave it for a few days at room temperature, but because there is dairy in the sauce, it the best you put it in your fridge, which will also keep the sauce fresher and last longer. You can use the fresh sauce for 2 to 3 weeks before it will start to spoil. Dont get discouraged by how hard the consistency got, just put it in the microwave to make it smooth again.

    If you want to freeze the caramel sauce, you can do that but you will need to switch the containers from glass to plastic because the glass could shatter under low temperatures. Use plastic containers that are airtight, and the sauce will last you for up to 3 months.

    When I was in culinary school, one of the very first lessons the pastry chefs taught was how much respect to give caramel. They instilled in us just how dangerous it was. All due to the science of caramel.

    Why is a pot of water + sugar more dangerous than a boiling pot of plain water? Because, waters boiling point is 212 degrees F.

    But when you add sugar to water, the sugar raises the boiling point of the water. Sugar syrup starts to take on a caramel color between 340 and 350 degrees F.

    Pastry chefs creating caramel candies can be working with a substance as hot as 410 degrees F. As you can imagine, its very dangerous because it is so hot. If it splashes your skin or worse, youre looking at a very serious injury.

    Be prepared to stir the sugar constantly. Sometimes when we cook we dont need to be actively involved with the process. This is one of those recipes where you need to be actively involved the whole time. Dont walk away, burnt sugar isnt pleasant.

    Start by combining the water with the sugar in a small saucepan into the mixture that looks like wet sand. You may need a little more or water depending on several factors.

    When the sugar mixture is at the right consistency, place the saucepan on the stove over medium heat. Give the sugar mixture one good stir and shake the saucepan until it is level.

    Bring the sugar mixture to a boil. At this point, you need to pay careful attention to keep the sugar from burning. Try to avoid stirring because excess stirring can cause the sugar to crystalize.

    Continue to cook the sugar mixture until it reaches the color you want. Never leave the saucepan unwatched. The sugar mixture can go from pale to burned in a minute or two.
