Dont get scared away from the idea of fermenting peppers to make hot sauce! Fermentation is a big word, but luckily chilies are some of the easiest foods to ferment.

But we get a bit of fermentation going and then let it at room temperature.

Plastic bottles are cheaper than glass bottles and are usually cold filled, meaning the manufacturer dispenses the sauce into the bottle once its cooled. Cold filling saves money on chilling equipment, and it also protects you and your staff from burns. However, unless the manufacturer uses a blast chiller, cold filling exposes your sauce to bacteria. You may have to add flavor-altering chemicals and preservatives to your plastic bottled sauces. If youre starting a hot sauce business, glass bottles are your only viable option, since peppers are acidic and can dissolve plastic bottles into your hot sauce.

A hot sauce will need to have a low pH balance to prevent bacterial growth and will ultimately give it a longer shelf life. Read further on why the pH level of hot sauce is important. The pH of a hot sauce should be about 3.4 pH. This is to prevent the growth of bacteria. Vinegar helps preserve the sauce but depending on what the rest of your ingredients are, especially if there are other fruits and vegetables, the pH could rise.

Add all ingredients, except one cup of vinegar to a blender.

and process on high until smooth you may need to do this in batches. After the last batch is processed, pour that one cup of vinegar into the blender. This will allow the bits and pieces of pepper, onions, and garlic left in the blender to dislodge. This vinegar with the bits also goes into your saucepan.

Pour the resulting sauce to a large covered saucepan. Bring to a boil, and then reduce heat to a simmer. Simmer 15 minutes.

While your hot sauce is simmering, sterilize small glass canning jars, stainless steel tongs, rings, lids and stainless steel ladle in boiling water for 12 minutes, allow to cool, remove and dry.

When jars are dry and cool enough to handle, bring hot sauce back up to a boil. You want the hot sauce at boiling temperature when you transfer it. The liquid needs to be very hot to create the vacuum with your lid.

Using a stainless steel ladle, portion the hot sauce into the jars

leaving ½ headspace.

Put a lid on the jar, place ring, and tighten by hand. Turn jars upside down, allowing to cool until jars can be handled by hand.

Wrap jars in aluminum foil to keep out light. Put filled hot sauce jars in the back of your refrigerator for a week prior to consuming. Store in refrigerator at all times.
