Huli huli is one of the things I miss most from when I lived on Oahu. There was always a guy parked up at North Shore with a big rotisserie grill trailer, selling whole chickens and rice on the side of the road. Wonderful stuff!I’ve never actually tried to make the sauce myself… I just order it.

Huli Huli sauce. Been there, done that. Would not have done it if I didn’t experience in Hawaii .

Hawaiian Style Smoked Pork Ribs

Ingredients:

2 Racks of Pork Ribs

Huli Huli Sauce*

2 Teaspoons Sea Salt

2 Teaspoons Black Pepper

2 Teaspoons Chinese Five Spice

1 Teaspoon Garlic Powder

1½ Tablespoons Brown Sugar

½ Teaspoon Smoked Paprika

1 Cup Hawaiian BBQ Sauce *

¼ Cup Pineapple Juice

Directions:

Whisk together all the dry rub ingredients in a small bowl.

Remove the silver skin from the back of the pork ribs. Then moisten the ribs with the Huli Huli Sauce, about 1½ Tablespoons per side. Then liberally season the ribs with the dry rub. Wrap the ribs in plastic wrap and refrigerate over night.

Remove the ribs from the refrigerator 1 hour before putting them on the smoker and allow them to come up to room temperature. Prep your smoker according to you manufactures directions . Remove the plastic wrap and smoke the ribs between 225-250 for 4-5 hours until they are just about to fall off the bone. Then remove the ribs and baste in 1 cup of Hawaiian BBQ sauce mixed with ¼ Cup Pineapple Juice.

Wrap the ribs tightly in foil and put back on the smoker for 1 more hour. Then remove from the smoker and allow the meat to rest for at least 20 minutes.

Fresh seafood served with a view of the ocean, juicy Maui Gold pineapples dusted with plum powder, POG juice at breakfast, a sandwich picnic on the road to Hana, banana bread from a roadside stand and kalua pork served at the Lahaina luau.

I can almost taste all those amazing dishes.

I know were return to Hawaii some day on vacation. But in the meantime, Ive been trying to capture the flavor of that memorable vacation at home.

This easy-to-make Hawaiian pork recipe pays tribute to the classic dish without all the work.

Bamboo skewers can burn when on the grill – but thankfully, all you have to do is properly soak them to help prevent this.

Bamboo is very slow to release moisture – but it is also slow to soak it up. You need to soak bamboo skewers in water for at least 30 minutes, but preferably overnight, to prevent them from burning on the grill.

We like to just place skewers in a casserole or lasagna pan and fill it up with water and leave it on the counter so it’s ready for grilling the next day!

Pre-heat the oven to 350

In a medium-sized saucepan bring the Coconut Water, Stock, and Soy Sauce to a boil. Once the liquid is almost to a boil, melt the butter in a large pot over medium-low. Then toast the rice and orzo pasta until opaque and it smells nutty, about 2 minutes, stirring constantly.

Carefully pour the boiling liquid into the toasted rice and stir in the lime juice, and garlic. Cover and simmer for 17-20 minutes.

Meanwhile add the slivered almonds and toasted coconut to a dry sheet pan in a single layer. Toast in the oven until golden brown, for 15-20 minutes, checking every so often and tossing for even browning.

Once the rice is cooked, fluff with a fork and allow it to sit for 2-3 minutes. Then toss in the chopped green onion, cilantro, lime zest, and the toasted coconut and slivered almonds.

I wish I was back in that beach chair on Maui right now Relaxing and enjoying the view.

So for today Going Hawaiian Style treat Im making Huli-Huli Chicken On a Stick. Ive mentioned Huli Huli sauce several times over the past couple of day but Im not sure Ive explained what it is.

Huli Huli sauce is a Hawaiian sweet and savory marinade use for all types of meats especially whole chickens. It can be thickened into a sauce or gravy too. Not only do I use this sauce for Chicken and Pork Ive even used this to make Huli Huli Salmon and it was to die for.

The term Huli Huli literally translates to Turn-Turn and this is what the children would shout when it was time to turn the Chickens over on the grill.

But whole chicken isnt always easy to serve a large crowd . Im taking this Hawaiian Classic and just putting it on a stick for easy eating and to feed the masses. Besides whats more delightful than Chicken On a Stick?

Oh did I mention there is pineapple on this too? Sweet, Juicy, Caramelized, Grilled Pineapple! Is your mouth watering yet?
