How Long Does It Stay Good

The sauce should stay good in your refrigerator for 5-7 days and the flavor will intensify as it refrigerates. For that reason, I used minced garlic from a jar rather than fresh. I find that fresh garlic leaves me with the most unbearable breath for a good 24 hrs no matter how many times I brush and gargle with mouthwash. Garlic from a jar is a little more subtle.

I was pleasantly surprised to find cucumbers on sale 7 for $1 at our produce market today so that really brought the price of this sauce down. Unfortunately, they are only this cheap for a short time during the summer.

Dont let the rest of the cucumber go to waste. Slice it up for dipping into the Tzatziki, layering on sandwiches and salads or as a garnish!

Homemade tzatziki sauce is best consumed fresh. You can freeze it, if you have some leftover, but dont expect the result to be perfect. The cucumbers will become a bit mushy and the sauce a bit more watery.

You can store your homemade tzatziki sauce in the fridge in an airtight container. It will last for about 3 days before it starts going bad. If it has gone bad you can tell by the smell. If it smells sour, like yogurt or milk gone bad, then it is time to get rid of it.

How To Assemble A Vegetable Platter

I used the finished Greek tzatziki sauce as a dip for fresh veggies, creating a veggie tray thats totally healthy and nutritious and just as pleasing to the eye as to the eater. Here are a few tips to create a great veggie tray.

If time is an issue or youre feeding a smaller crowd, my secret is to stock up on the already cut veggies from the salad bar. Youll find youll get a whole lot more variety. Or, check the pre-packaged section of your produce aisle for pre-cut vegetables.

Choose different colors and shapes of veggies and arrange them so the same colors dont sit next to one another. Instead, place them opposite one another. When working with odd numbers of the same type, position them as you would see on a clock at 10:00, 2:00 and 6:00.

Serve miniature versions of the vegetable instead of cutting them up, like baby carrots, small radishes, cherry tomatoes and even baby corn. Keep some of the stems too, for visual interest and to show off their freshness.

Pickled or marinated veggies add a unique bite to any veggie platter. Consider adding any of these:

  • Pickled beets
  • Pepperoncini or other pickles peppers
  • Olives

Not all veggies need to be served raw. Consider these still fresh veggie options:

  • Par-boil new potatoes and slather them in pesto.
  • Add a steamed or grilled artichoke to give weight to the platter.
  • Give broccoli a quick steam and a spritz of sesame oil with salt to give an Asian flair.

How To Make Homemade Tzatziki Sauce

Another super simple recipe for you!

In a small bowl, stir together plain Greek yogurt, peeled and diced cucumber, minced garlic, fresh lemon juice and fresh dill. Season with salt and pepper.

For the cucumber, I prefer to use mini cucumbers or an English cucumbers because theyre essentially seedless. If you use a regular cucumber, youll want to remove the seeds. For this sauce I diced the cucumber, but you can also grate it for a finer more authentic texture. Grating cucumber does cause the cucumber to release more liquid so youll want to place the grated cucumber in a mesh strainer and squeeze as much liquid out as possible before adding it with the other ingredients.

You can also blend all of the ingredients in a food processor if you prefer a creamier sauce.

  • Mix together in a bowl the Greek yogurt, cucumber, garlic, olive oil, dill and salt in a bowl until well combined.

    How To Make Tzatziki Sauce

Tzatziki sauce is as simple as combining all the ingredients in a bowl, stirring and serving.

When it comes to the cucumber, you can either use a cheese grater to shred it, or finely dice it with or without the peel.

PRO TIP: Make sure you squeeze as much liquid out of it as possible, or your sauce can become pretty watery.

Im using garlic powder for my easy Tzatziki Sauce because I dont really like biting into fresh, raw garlic, as that can be a little overpowering. If youre a fan of fresh, raw garlic, you can definitely add that in place of the garlic powder.
