How To Make Tzatziki Sauce:

  • Starting with the star of the dish, the cucumber, I recommend an English cucumber. The cucumber is the main ingredient therefore it should be freshly bought, not mushy or gummy. It is peeled first and FINELY diced. Do you have to peel it? No. Some even recommend putting it in a small food processor for a few pulses. Me? Im old school I just diced it VERY VERY small.
  • Cucumbers hold a LOT of water which you will find especially true if you used a food processor. All this excess water needs to be removed otherwise our Tzatziki sauce will be very watered down. So simply place the cucumber on a paper towel and ring out the excess water. You can leave it on a dry paper towel while you gather the rest of the ingredients.
  • Mix the diced cucumber with the yogurt, oil, vinegar, garlic and lemon. Season with a little salt and pepper and FRESH dill.
  • The next question is what to serve with our freshly made sauce.

    1- To make tzatziki, start by grating the cucumber in your food processor with a pinch of kosher salt. I like to use English seedless cucumbers that have been at least partially peeled. Make sure that you drain the cucumbers very well over a mesh sieve. You can do this step ahead of time, or if youre in a rush, its helpful to place the grated cucumber in a clean kitchen cloth or a heavy napkin and squeeze all the liquid out.

    2- I like to mix my actual tztaziki sauce by hand in a large bowl. First, combine the garlic with white vinegar, extra virgin olive oil, and a pinch more salt. Add the drained cucumber. Finally, stir in the strained yogurt Make sure to stir until everything is well combined.

    3- For best taste and texture, cover tztaziki sauce tightly and refrigerate for a couple of hours before use.

    4- If youre not sure you can handle this much garlic, start with half the amount of garlic the first time you try it.

    How To Make This Sauce:

  • The Worlds Best Tzatziki Sauce is made with Greek Yogurt, and there are manygood brands. If you cant find Greek yogurt, you can make something similar by straining regular plain yogurt for several hours to remove the liquid and thicken the yogurt.
  • I use the yogurt strainer you see in this photo, but if you dont have one Georgette recommends using two coffee filters inside a colander, placed inside a bowl to catch the liquid. The first photo shows the yogurt starting to drain.Let the yogurt drain on the counter for 2 hours, or until it reaches the thickness you want. The next photo shows how much liquid had drained out after 2 hours, when the yogurt was nice and thick.
  • Since Tzatziki contains finely-chopped cucumber, its best to remove the seeds of the cucumber so the sauce doesnt get too watery. Use a sharp pointed spoon to scrape out seeds as shown in this photo.
  • Then cut cucumbers into thick slices and put in a colander placed in the sink. Sprinkle on salt and let cucumbers release water and drain for at least 30 minutes or more.
  • Tzatziki traditionally contains fresh dill, which makes me glad I have this lovely dill from my garden. Use the fine tips of the dill leaves and discard the thick stems. Some versions of Tzatziki use mint, and Im thinking dried dill weed would also work in a pinch.
  • Then stir the pureed cucumber mixture into the Greek yogurt
