Many thanks,

Irene is right. It seems like this ingredient, often listed as either “chipotle peppers in adobo” or “chiles in adobo,” is popping up with increasing frequency in recipes.

So where do you find them? We typically find that chiles in adobo are hiding in the International aisle of the supermarket, along with other Latin ingredients. Less frequently, we’ve found them stocked with canned tomatoes. They usually come in short, 2-inch-tall cans, similar to the size of most tomato paste cans.

So what do you do with them? And if a recipe calls for only one pepper, what do you do with the rest of them?

Want to try them? Here are three dishes we absolutely loved that use chiles in adobo:

    Tips For Making Adobo Sauce

Dont touch your eyes! When you are prepping the chili peppers, dont touch your face, especially your eyes. You may even want to wear gloves if you have sensitive skin. When you cut into a chili pepper, capsaicin can transfer to your skin causing a burning sensation, although it doesnt actually damage the skin. Wash your hands immediately after prepping the chilies.Use whole spices. Whole spices infuse the sauce with even more flavor than their ground counterparts. Be sure to toast them in a dry skillet to enhance their nuanced flavors! Use a neutral oil. Use vegetable oil or canola oil to sauté the onions and garlic. Dont substitute with olive oil because it is too strong.Dont let the blender explode! Make sure to leave a corner of the blender lid or vent open and covered with a paper towel to let steam escape, otherwise the blender can explode! You may or may not need to strain the chili sauce. If you have a high-powered blender like a Blendtec or Vitamix, it should process the adobo sauce until smooth without any whole spices left. If you dont have a high-powered blender, then strain the adobo sauce through a fine mesh strainer into a bowl, using a rubber spatula to push the mixture through. The solids left behind are the spices so dont toss them! You can wrap them in a cheese cloth or mash them and add them to the sauce.Double batch. This smoky adobo sauce is a fabulous recipe to double! Freeze leftovers in portion size bags to easy use later.

Remove The Seeds From The Chiles

    • The seeds need to be removed from the chilies before using because the seeds contain most of the heat if you leave them in, your mouth will be on fire and the adobo sauce will be inedible.
    • The easiest way to remove the seeds is to cut the tops off of the chilies with kitchen shears. Next, cut the chilies along one edge and open them like a book to expose the seeds inside.
    • Scrape out all of the seeds.
    • Next, toast the chilies in a dry skillet for just a few minutes. Set aside until ready to use.

    What Does It Taste Like

Hoisin is dark in color and thick in consistency. It has a very strong salty and slightly sweet flavor. Hoisin sauce does taste a bit like an American-style barbecue sauce, but much saltier, richer, less sweet, and has a flavor all its own. The fermented soybeans add the savory umami element that some other sauces use fish or meat to achieve.

If you cant find any Adobo sauce, you can look for canned chipotle. Chipotles are Mexican dried and smoked jalapeño chili peppers that are often sold canned in Adobo sauce.

You can either drain the sauce from the chilis or blend them for a more intense smoky flavor.

Just keep in mind that Adobo sauce from canned chipotle, with or without the chilis, has a slightly more fiery heat than regular Adobo sauce. So, if you dont want to cook a hot dish, dont use this as a substitute.

How To Choose A Substitute For Hoisin

If you have a bit of time, making your own hoisin sauce is the best way to go about it. As most substitutions require some flavor matching anyway, it might not be as much of an extra step as youd first assume.

If you arent interested in making your own, what you choose really comes down to what the hoisin is being used for. For a marinade or rub, try barbecue or teriyaki. For a dipping sauce, think of using soy or oyster. For stir fries, black bean sauce might be your best option.

The trick is to remember the consistency, and what flavor you want to emphasize. Dont be put off by the obvious differences. Experimenting with different options could lead you to discovering something new.

Be careful! This is a potent mix. Most recipes call for a single tablespoon or two maximum. In this case, take a single chipotle with some of the sauce, pulse chop it , and measure the sauce according to the recipe. Any more and you may find the recipe a lot hotter than you expect.

Remember, in many recipes you can simply add more to taste, so its best to add a little and adjust up from there.
