How To Make Alabama White Bbq Sauce
This recipe comes to us from Georgia reader Sabrina Everett, who learned about the special sauce from Alabama relatives. Every time I make the sauce, it brings back memories of those summers in Tuscaloosa, she says.
Step 1: Whisk and Wait
Combine all the ingredients in a large bowl and whisk well. Cover and refrigerate overnight.
Step 2: Grill and Brush
Grill or smoke your meat of choice . During the last few minutes of cooking, brush your white sauce over the meat. Remove the meat from the grill or barbecue and serve, using the remaining sauce as a dip.
Test Kitchen tip: Its important to wait until your meat is almost finished cooking before brushing on the white sauce. If applied too early, the heat can cause the sauce to separate.

The head pitmaster of Big Bob Gibsons restaurant, Chris Lilly, first shared their restaurant original recipe which was measured in gallons and is a fairly simple mixture of mayonnaise, corn syrup, vinegar, and salt/pepper. My zesty version has the same sweet and tangy notes that make all BBQ sauces the perfect complement to smoked meats, but an Alabama white sauce is mayonnaise based, instead of tomato based, which gives it a great creamy flavor profile.
I first met Chris at a Guinness World Record event for the Largest Grilling Lesson in 2017 , and I was so incredibly impressed with his knowledge of all things BBQ. I consider my recipe an homage to the restaurant-style original with a little Hey Grill Hey kick.

Is your family a condiment family? What I mean by that, is do you tend to have about 5-10 condiments sitting out for dinners, potlucks, and barbecues? We are definitely guilty of this in my house. But, I truly believe that the perfect condiment can totally complete a dish.
One sauce that you definitely need to add to your summer spread is this Alabama White Sauce. Its a tangy, peppery white barbeque sauce that has a bit of a punch because of the addition of Horseradish. Its so good on wings, grilled chicken, burgers, or even used as a dipping sauce!

Where Did Alabama White Bbq Sauce Originate
Alabama BBQ sauce was made famous by Big Bob Gibson Bar-B-Q in Decatur, Alabama. They have massive hickory-fed pits that house their famous smoked split chickens. There are many different kinds of BBQ sauces throughout the United States. Kansas City has its very own sweet BBQ sauce that is thick. Based as a thin vinegar sauce, belongs to North Carolina and South Carolina is famous for their mustard-based barbecue sauce.
North Carolinas vinegar based sauce with brown sugar, cayenne pepper, and a touch of ketchup makes a beautiful tasty sauce for BBQing.
Kansas Citys sweet BBQ is sweet, thick and tomatoey. It stays on the top of your meats. Great for spare ribs, because it does not soak into the meat and lets the taste of the ribs shine through.
South Carolina has the mustard BBQ sauce that is just delightful. Combined with honey, vinegar and sugar the sauce is great on meats, hamburgers, and vegetables.
One sauce you may not have heard of yet is the white and tangy BBQ sauce from Alabama.
Alabama white sauce was created by Bob Gibson, in 1925 in Decatur, Alabama. It is better known today at the Big Bob Gibson Bar-B-Q restaurant in Alabama.
This tangy Alabama white sauce takes only about 5 minutes to make. The recipe is for 4 large chicken breasts, but if you are BBQing for a crowd, you may want to double the recipe.
Where Did Alabama White Sauce Come From
Alabama White Sauce was created by Robert Gibson at Big Bob Gibsons Bar-B-Q in Decatur, Alabama. At Big Bobs BBQ joint, they dunk smoked chicken into vats of the sauce before serving. The sauce clings to the meat, offering up a tanginess and rich flavor you wont get with any other bbq sauce.
You can, of course, purchase Alabama style white sauce at your local grocer, but its so much better when you make it at home. My version ups the horseradish and other zesty elements, making it the best white bbq sauce Ive ever had.
I hope you enjoy it. Lets talk about how we make it, shall we?
Why Is Alabama White Sauce Controversial
When youre smoking chicken for hours at a time in a pit, it has a tendency to dry out once the fat is cooked away. This is where the Alabama white sauce controversy enters the picture. Combined with the vinegar and lemon juice, it adds a tanginess that accentuates the flavor of the smoked chicken.

Ingredients In White Bbq Sauce
- mayonnaise Any variety of plain flavored mayo can be used, but I dont recommend using non-fat mayo.
- creamy horseradish sauce This is NOT the same as prepared horseradish. Actually prepared horseradish is one of the ingredients in creamy horseradish sauce.
- apple cider vinegar the hint of apple cider gives a nice boost to the tangy flavor of the Alabama white sauce. Regular white vinegar will work in a pinch.
- yellow mustard
- sugar Feel free to substitute with a granulated sugar substitute
- salt and black pepper
This is tangy, lip smacking and fun change that can be used on your next batch of smoked or grilled chicken. Its key to make my Alabama Style Chicken Sandwiches and used it the other night on my BBQ Spatchcock Chicken. So, so good!
I like to reserve some white barbecue sauce to use as a dipping sauce for shredded chicken and in sandwiches, too.
For another homemade barbecue sauce, give my Kansas City Style BBQ Sauce a try on your next rack of ribs. Enjoy!

White Barbecue Sauce History
Bob Gibson, of Big Bob Gibson Bar-B-Q in Decatur, Alabama, is credited with creating white barbecue sauce in 1925.
The white sauce was never really intended to accompany meats like beef brisket. Instead, it was meant to accompany chicken and turkey and to be used as a finishing sauce rather than as a basting medium while the meat is grilling.
Gibson smoked whole chickens for three hours and to keep them from drying out, he devised the white sauce to dunk them in once they came off the pit and were held for service. He thought the fat in the mayonnaise helped them to stay juicy.

This Alabama White Sauce is one of those special recipes that everyone will be asking you to make for the next barbecue or cookout. It has a creamy texture with a really nice zesty flavor. Try it on all sorts of different meats or even use it as a marinade before grilling and a basting sauce during grilling.
What Does White Barbecue Sauce Taste Like
One of the big questions I have is what is Alabama White BBQ Sauce, what do barbecue sauces taste like. This simple recipe describes it in tart taste but peppery bite made with horseradish and horseradish cream. Despite being non-sweet compared to other barbecue sauces, this sauce has been made to be creamy and delicious with mayo.
What You Will Need For This Alabama White Sauce Recipe
- 1 cup of mayonnaise
- 1/4 cup of white vinegar
- 1 tablespoon of brown mustard, spicy
- 2 teaspoons horseradish, cream style
- 1/2 teaspoon salt
- 1/2 teaspoon of black pepper, freshly ground
- 1/4 teaspoon each of paprika and garlic powder
Using a medium bowl, mix all the ingredients together with a whisk until smooth. Put the mixture in a tight jar, like a mason jar and refrigerate. You can make this up to a week early. Whatever you are cooking, whether it is chicken, pork, or fish, you will need a brush for the white sauce to baste your food. Use a generous portion while grilling and serve the rest at the table.
For a change use a ½ cup of mayonnaise and ½ cup of Greek yogurt.
