We became big Nashville hot fans while Janette was shooting at Hattie Bs in Nashville for Food Network.

I mean, delicious fried chicken brushed with the perfect spicy glazewhats not to love??

Last fall we put a twist on it and made Nashville Hot Softshell Crab. We were in love and decided all things should become Nashville Hot.

With the Superbowl coming up, I decided to put it into a bite-size snack suitable for a game day crowd.

How To Make Spicy Oil For Fried Chicken

Nashville Hot N Spicy Chicken Sauce  Pepper Palace

After all of the pieces of chicken have been fried and are resting in the oven, make the spicy oil.

Use a ladle to scoop ¾ cup of fry oil from the pot into a heat-proof mixing bowl or measuring cup. Add the cayenne pepper, smoked paprika, brown sugar, chili powder, garlic powder, and salt. Stir to mix thoroughly.

When ready to serve, remove the rack from the oven and brush the spicy oil over all sides of the fried chicken pieces.

Tips For Making Nashville Hot Chicken:

  • You can use any cut of chicken you prefer. Bone-in chicken thighs are a great, cheaper alternative.
  • Also, feel free to add more cayenne pepper to make it even hotter. I am a total wimp when it comes to spice so I am only using a tablespoon of cayenne pepper in my hot sauce. If you go to the famous Hattie Bs restaurant in Nashville, they use about 6 tablespoons of cayenne pepper just in their medium sauce! So my advice is to start with a little and add more until you get it to your preferred level of heat.

How To Make Nashville Hot Chicken

  • Make the spice rub: Combine all spices.
  • Make the Marinade: Combine buttermilk, bay leaves, and some of the spice mixture. Coat chicken and soak for at least 3 hours.
  • Set up a breading station: Lay out buttermilk mixture, and flour mixture in separate shallow dishes. Be sure to shake off excess flour so you dont transfer it to your wet mixture.
  • Bread Chicken: Dip in flour, buttermilk, and then flour again.
  • Fry: Fry for 7 minutes per side.
  • Make the Hot Sauce: Combine all ingredients except the butter. Whisk in butter just before serving, and then drizzle over chicken.

    Why Is It Called Nashville Hot Chicken

    Its a type of fried chicken that is well known in Nashville, Tennessee. Its typically prepared using a breast, thigh, or wing that has been brined and marinated and then floured, seasoned, and deep-fried. From there, you cover it in a paste or sauce that has been spiced with cayenne pepper.

    The originator of hot chicken is the family of Andre Prince Jeffries, owner of Princes Hot Chicken Shack. She has operated the restaurant since 1980. Previously, it was owned by her great-uncle, Thornton Prince III.

    Jeffries has mentioned the development of hot chicken was by accident. Her great-uncle Thornton was known as a womanizer, and after a late night, out his girlfriend at the time, cooked him fried chicken with extra pepper as revenge. Thornton actually liked the hot chicken. Later, he and his brothers created their own recipe and opened the BBQ Chicken Shack café.

    Since the dish is traditionally fried with oil or grease, a portion of that grease is then used to make the spicy paste the chicken is coated in.     Tips For Making Nashville Hot Chicken

    Nashville Hot Sauce!
    • Use an instant read thermometer. I highly recommend an instant-read thermometer to ensure you have the correct temperature not only at the beginning of frying, but throughout the entire frying process. It will save you a few test chicken pieces and ensure all your chicken is fried to golden perfection.
    • Test oil. If you dont have a thermometer, medium-high heat should be about right, but every stove is different, so you will want to test the oil before frying the chicken. Test the temperature with a pinch of flour or better yet, an extra piece of chicken. If it boils, your oil is ready but if it boils and the test piece turns dark within a minute or so, your oil is too hot. You will have to remove from the heat, wait a few minutes, return to heat and try again.
    • Dont overcrowd pan. Fry the Nashville chicken in batches. This allows the chicken to cook evenly without touching.
    • Line on paper towels. Use a spider trainer, fine mesh sieve or slotted spoon to transfer the spicy fried chicken to a paper towel lined baking sheet or serving platter in a single layer without touching. You dont want the pieces touching or they will steam you also dont want them sitting in oil or they wont be as crispy.

    Use the tongs to carefully pull the chicken pieces from the hot oil and place them on the clean rack. Test the chicken with a meat thermometerthe largest pieces should be 165 degrees F inside.

    Then place the fried chicken in the oven to keep warm and crisp.

    Repeat with the remaining chicken pieces, continuing to place fried chicken on the rack in the oven as they are cooked. Turn off the stovetop heat as soon as all of the chicken is done.

    • Microwave: the chicken wont be nearly as crispy if reheated in the microwave but it will still be flavorful. Transfer chicken to a microwave safe plate in an even layer. Microwave for 90 seconds, then in additional increments of 15 seconds as needed.
    • Oven: spread chicken on a lightly greased baking rack set in a baking sheet. Bake at 325 degrees F for 10 minutes or until heated through. You can also fry the chicken again to reheat.

    To make incredible fried chicken, I believe you must begin with a marinade. This chicken recipe is based on this Fried Chicken that I make a ton! The marinade will add flavor throughout the chicken making sure that every bite is injected with deliciousness.

    The base of this marinade is:

    Buttermilk always adds incredible tang to the chicken and also because of the acids, it helps to break it down and tenderize it. The hot sauce adds salt and heat that also injects into the chicken.

    Next the flour mixture is crucial for making sure that the crispy breading is filled with flavor as well. My key ingredients for making the very best fried chicken breading are:

    I use all purpose flour but sometimes I will vary it up and use Self Rising Flour to give the chicken breading a bit of a lift.

    Cornstarch is a key ingredient in creating a delicious crunch for my chicken. It adds such a wonderful texture and is crucial to this breading.

    While this chicken is already going to have a wonderful kick of spice from the sauce, I also add cayenne, black pepper and paprika to the breading. It is sensational.
