    But you dont want all that liquid going into a keto tzatziki sauce. The key to this recipe is to remove as much of the moisture from the grated cucumber as possible.

    To do this, I recommend taking a handful of grated cucumber at a time and squeezing it between your palms over the sink. Set it on a paper towel until youre ready to use.

    Alternatively, you could add the grated cucumber to a fine mesh sieve and press with paper towels to squeeze out the liquid.

    Finally, you could salt the cucumbers to draw out the water. Add the grated cucumber to a sieve over a bowl, toss with salt, then allow it to sit for about 15 minutes.

    Once the time is up, press with paper towels or the back of a spatula to release even more water.

    If you use the salting method, you may want to reduce the amount of salt you add to the recipe.

    You want to get out as much water from the cucumber as you can with salt and letting the cucumber sit out on paper towels.

    I usually wait about an hour however if you are in a rush, I find that 15 minutes is enough time of them sitting out for me to then squeeze enough of the water out of them to get the results I want. But I much prefer the hour time for sitting out as there is less for me to squeeze out. You want as much moisture out of the cucumbers as possible.

    How To Make Tzatziki Sauce

    I am going to say this ahead of time, do NOT skip out on the time for drying out the cucumbers. It is important to dry them out so that you do not have a liquidy sauce.

    Peel the cucumber and then slice it in half and then in half again lengthwise and scoop out the seeds in the middle.

    Slice it up into smaller pieces and put them on top of paper towels and sprinkle the pieces of cucumber with the 1 tablespoon kosher salt and let them dry for a bit.

    Using the paper towel, wrap the cucumber and squeeze the slices to get out as much moisture as you can, you want them as dry as you can get them.

    Put the cucumbers into a blender or a food processor with the garlic, dill and lemon juice and chop till fine and combined.

    Add the garlic, dill and lemon juice mixture with the sour cream and Greek yogurt in a large mixing bowl and add kosher salt and pepper keep adding salt until you get a balanced flavor.

    Put the Tzatziki sauce in an airtight container and refrigerate until ready to use. The longer it sits, the better the flavors will mix, so feel free to make this ahead of time.

    • lemon juice. Fresh lemon juice is best, however if you only have bottled lemon juice that will work too.

    To do this, put a coffee filter inside of a strainer, put the strainer over a bowl , then put the yogurt/sour cream mixture on top. Put it in the refrigerator to drain all day long.

  • Start by grating the cucumber. Youll want to make sure you get as much moisture out of it as you can so that it doesnt make the sauce watery. Place the cucumber in a heavy duty paper towel, cheesecloth, or a clean dish towel, wrap it up, and then squeeze to remove the water from it.
  • Add the dried cucumber to a large bowl along with all of the other ingredients and then stir to combine.
  • Thats it! Some people put theirs in a food processor to make the dip smoother but I like the little bits of cucumber. Feel free to do whatever you like best.

    Note: The longer you let this dip sit the more the flavors develop. I recommend making it the night before and letting it sit in the refrigerator overnight. If you are in a hurry give it at least 1 hour before using.

    A lot of tzatziki recipes only use yogurt but adding sour cream makes it smoother and richer. Some people add cream cheese but I find the cream cheese takes all the edge off the yogurt. I like the yogurt/sour cream mix.

    My love of tzatziki goes back to the pedestrian mall of Prince Arthur Street in Montreal in its 1980s heyday.

    The mall is/was dedicated to Greek restaurants with plenty of al fresco dining and it featured a Bring Your Own Wine policy long before it was legal or widespread. That alone made the price of a dinner out quite reasonable.

    It seems the street no longer enjoys the reputation and crowds it used to but it was there I was first served tzatziki. creamy, garlicky with a hit of cucumber to add some freshness.

    The first tzatziki I ever had and that became the gold standard for us- was so garlicky that if only one of my husband or I had the tzatziki they had to sleep on the couch! It was that garlicky!

    I made this recipe with only 1 clove of garlic and it is rather mild- so feel free to go to 2 or more depending on your taste. Also when garlic is fresh in season it has a lot more oil and flavour than the out of season or imported bulbs. So- govern yourself accordingly!

    Tzatziki is great as a dip for toasted pita triangles, baguette, celery or carrots etc. It is also great in a Souvlaki as a condiment.

    Ingredient Notes And Possible Substitutions

    • Instead of using sour cream, you can substitute plain yogurt, full fat. This simple recipe will still work with fat-free yogurt, but keep in mind that the texture will be thinner. Or, for something different, use softened cream cheese.
    • For the best results and fresh flavors in this homemade tzatziki sauce, you will use fresh herbs. But if you have to substitute dried dill for fresh, you will want to use 2 teaspoons of dried dill instead of the 2 Tablespoons of fresh dill. You may want to let it sit for at least ½ an hour to allow the flavors to blend.
    • However, if you dont care for dill, some people enjoy this with fresh mint or fresh garlic . Or you could add in a Tablespoon of lemon zest or white wine vinegar.
    • In case you cannot find English cucumbers, regular garden cucumbers should work fine. Take note that regular cucumbers contain so much water that you will have to grate more to make 1 cup of cucumber. And make sure you squeeze it really well to get out the excess liquid. You may want to press the shredded cucumber through a fine-mesh strainer or fine mesh sieve before squeezing it with a kitchen towel. This is an effective way to remove as much moisture as possible.
