What Kind Of Tomatoes Should I Use For Homemade Spaghetti Sauce

I prefer canned crushed tomatoes. They make a velvety smooth sauce that incorporates so well with the spices.

However, you can also use a can of diced tomatoes . You can even use a fire-roasted diced tomato or a flavored one if you want to change up the flavor a bit.

Stewed tomatoes can work too, but they start off with a more cooked flavor, so keep that in mind.

And if all you have is diced tomatoes abut you want a smoother sauce, just puree them up in a blender!

For the recipe below, youll need about 56 oz. total of crushed/diced/pureed tomatoes, which is 7 cups.

And now, I almost always make this as a simple spaghetti sauce, but sometimes I want to change it up a bit.

Ive got a few different flavor ideas. You can pick one and make the whole batch that way or you can divide the sauce into two pots and do two different flavors.

Should You Have Leftovers

This sauce will last in the refrigerator in an airtight container for 3-4 days. You can also opt to freeze this Meatless Spaghetti Sauce sealed for 3 months.

The best way to reheat this sauce is in a large saucepan fitted with a lid. Set your stovetop to high and occasionally stir until heated all the way through .

If your sauce is already mixed with pasta, add it to an oven-safe baking dish and cover it with aluminum foil. Bake for 10-15 minutes at 350°F. If it seems too stodgy, add 1-2 tablespoons of vegetable broth.

  • If you have a garden full of tomatoes, thats wonderful! You can easily substitute peeled fresh tomatoes for the crushed and diced tomatoes. Roma tomatoes or another meaty variety work best. Youll need about four pounds.
  • Add more veggies: Chopped bell peppers or mushrooms can be added. Sauté them with the onions. Or stir in a few handfuls of baby spinach right before serving.
  • I like to serve this sauce with homemade meatballs or baked turkey meatballs. Frozen meatballs are so handy. Just add them to the sauce about halfway through the simmering time so they get heated through.

You can even use an Instant Pot uncovered on the sauté setting for a period of time to reduce it.

As this recipe is written, the flavors are amazing, although if cooking this low and slow, I would omit the tomato paste as this will thicken on its own. I only use it for when time is tight.

This is perfect for any quick dinner, over any pasta and it easily doubles to feed a crowd. It also is one of my go to sauces when I make my classic beef meatballs. Enjoy!

You Dont Cook The Pasta In The Sauce

A chef once told me to cook my fresh pasta 70 percent in the water and 30 percent in the sauce, Underbrink says. This is because cooking the pasta in the sauce allows it to absorb the flavors as well as coat itself in the sauce much more nicely. So just before the pasta is finished cooking, quickly drain it, and add it to a pan with the heated sauce. Give it a few more minutes to finish cooking before serving.
