FLORENCE, Ala., June 3, 2013 Walmart will open the first Walmart Neighborhood Market in Florence on Wednesday, June 12, following a brief grand-opening ceremony at 7:30 a.m. The new store, approximately one-quarter the size of a Walmart Supercenter, is located at 1410 Florence Blvd. and is open daily from 6 a.m. to midnight. The new store will provide local customers with a new, convenient option for their grocery shopping needs, including fresh produce and pharmacy services. The Florence store is one of 17 Walmart stores opening in communities across the United States on June 12.

We are pleased to welcome the new Walmart Neighborhood Market to the Shoals with its store opening in Florence, said Shoals Chamber of Commerce President Steve Holt. The Origins Of White Sauce

White sauce is a tradition of Northern Alabama barbecue thats attributed to Bob Gibson of Big Bob Gibson Bar-B-Q in Decatur, AL. Gibson started selling barbecue out of his backyard in 1925 and over the years developed a reputation for his pork and chicken and especially his tangy, mayonnaise-based Bar-B-Q White Sauce.

Today at Big Bob Gibson Bar-B-Q, they serve all the usual suspectsbrisket, pork, ribs, turkeybut their claim to fame is the quarter, half, or whole barbecued chicken dipped in the famous white sauce, as well as pulled chicken sandwiches drizzled with the stuff.

If youve never tasted white sauce, you owe it to yourself to give it a try. I think youll be surprised how good it is.

This recipe appeared in the June/July 2011 special barbecue edition of Saveur magazine and is attributed to Big Bob Gibson Bar-B-Q. It includes a recipe for both the white sauce and the rub for the pulled chicken. Ive included both here, but you can prepare barbecued chicken for these sandwiches any way you like, including the ever-popular Hot & Fast Chicken on the Weber Smokey Mountain Cooker, which is what I did for my sandwiches.

I just drizzled the white sauce on the pulled chicken when I made my sandwiches, but youll notice that the original recipe suggests basting the chicken with sauce during cooking.

First Some Quick Notes

Before we get started, here are some quick things to think about. Otherwise, just scroll all the way down to the recipe if you want to skip all the yada-yada-yada.

What chicken should I use? For this recipe, you can use a whole chicken either split in half or quartered, or a mix of up to 10 individual pieces of thighs or breasts. Personally, I prefer to use chicken thighs since theyre juicier, more flavorful and also give you extra leeway from overcooking, especially if youre worried about the meat drying out.

Will this recipe work in the oven? Personally, I use a pellet grill for this recipe , which I find to be a convenient happy medium between the oven and a traditional grill. However, you can use a regular oven as well without any changes to the recipe or directions unless youre using a convection oven, which typically requires you to reduce the recipe temperature by 25 degrees. A charcoal or gas grill would be an excellent option as well but you will need to be extra mindful of your temperature management. Regardless of your cooking method, I highly recommend using an instant-read thermometer on the meat to get perfect temps.

Today, many have heard of Big Bob Gibsons Bar-B-Q, which is located in Northern Alabama, because of the awards that Pitmaster, Chef, and part-owner Chris Lilly has amassed for his delicious smoked chicken and barbecue.

If you are in Alabama or the southeast, you can easily pick up a bottle at your local grocery store. If not, then use this recipe to make your own homemade barbecue sauce. Its a versatile condiment that is low-carb and tangy.

This BBQ staple is made with simple ingredients it has a mayonnaise base, black pepper, horseradish, spices, and the addition of vinegar, making it a tangy sauce perfect for chicken breasts, pork chops, pork tenderloin, pulled pork, and just about any piece of meat that youd like. Some people even use it as a dipping sauce for things like chicken nuggets and French fries. Its not like traditional barbecue sauce recipes that are tomato-based.

We all probably have all of the ingredients already in our pantry and it comes together in no time. The hardest part about making it is waiting a few hours for the flavors to meld before using it.

  • Add items to your shopping list
  • 1 cup apple juice
  • 1/2 tablespoon dark brown sugar
  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon fresh lemon juice
  • 8 boneless chicken, breasts â I use bone-in skinless chicken breasts
  • 2 cups mayonnaise
  • 2 teaspoons ground black pepper
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon salt
  • How to make it

    • Chicken: Combine brine ingredients in a large zip top bag & mix well. Add the chicken, squeeze out the air, and refrigerate for an hour â I did mine for 3 hours. Remove chicken from brine and grill as desired.
    • White sauce: Mix all ingredients well. Store refrigerated in an airtight container for up to 2 weeks.
    • To serve: The recipe says to dip the chicken into the sauce, but I simply drizzled it over the tops of the chicken. Delicious!

    What Does Alabama White Sauce Taste Like

    Although its white with a foundation of mayonnaise, its not sweet like the dressing you put on traditional coleslaw or broccoli salad. Its more savory with a tangy punch from the vinegar and a subtle heat from the horseradish and cayenne.

    It also has coarse-ground black pepper that stands out in contrast to the white sauce. That adds pops of peppery notes that complements barbecue really well.

    At Big Bob Gibson Bar-B-Q, they dunk whole smoked spatchcocked chickens into huge pots of the white sauce.

    As you can see in the video above, they smoke 70 chickens at a time. I imagine youre probably only smoking 1-2, which is why my recipe is scaled down to make a 2 1/4 cup batch.

    The sauce isnt just good on grilled chicken. Its also great mixed with smoked pulled turkey, tossed on pulled pork or mixed into slaw.

    Barbecue Chicken W Alabama White Bbq Sauce And Whiskey Hollow Barbecue Beans

    Big Bob Gibson
    • Louisiana Hot sauce to taste
    • Salt and white pepper to taste
    • A few teaspoons of apple juice, as needed, to thin the sauce so it coats the back of a spoon
  • Trim excess fat and skin from chicken thighs so they are shaped like little pillows
  • Lay skin side down on cutting board and apply a medium coat of SYD Jailbird Chicken rub. Flip over and arrange the thighs so the skin is nicely tucked under. Repeat with a medium coat. Place the 8 seasoned thighs in a half foil pan and leave in fridge for 1 hour
  • Remove thighs from fridge after a 1 hour chill. Put the cold pan straight into a 275F smoker with indirect heat. Toss a piece of pecan wood into the hot coals.
  • Cook in foil pan uncovered for 1 hour or until the crust sets on the chicken
  • Place a piece of unsalted butter carefully on top of each thigh. Wrap the foil pan tightly with a piece of foil. Cook covered for another 50-60 minutes. I take a peek at 50 minutes to see if the chicken skin is tender and the internal temp is beyond 185F
  • Remove from pit and vent once skin is tender. Let it cool about 10 minutes and dip the entire thigh into the white BBQ sauce to completely coat the thighs. Let the residual heat from the thighs to set the sauce. Serve with some store bought baked beans spiked with some hot sauce to taste. Ive become a fan of the Whiskey Hollow baked beans found in Walmart. Thank you Whiskey Hollow for sending some for me to try. They really pair well with this Alabama style chicken

    Directions: Putting It All Together

    Step 1: Combine all the dry ingredients for the rub in a food processor and pulse until well mixed. Add the molasses and pulse until well incorporated. Do the same with the mustard.

    Step 2: Apply the rub on the chicken, making sure you coat all sides. Note that the rub has a good amount of salt so dont over season. Let it rest until the rub starts to dissolve and absorb in the chicken. Dont forget to wash your hands thoroughly in warm, soapy water after handling raw chicken.

    Step 3: If using a pellet grill or oven, now is a good time to preheat it to 375 F . While waiting, put all the sauce ingredients in a bowl and mix them together. Make sure to sample it and adjust the mix to suit your taste. Think of this recipe as a base that you can further tweak to your liking.

    Step 4: Put the chicken on your preheated grill. If you have a probe thermometer designed for grill or oven use, make sure to stick it in a deep part of the chicken without touching the bone and set it to 160F to 165F for breasts or 170F to 175F for thighs. Like the question on whether a hotdog is a sandwich or not, there are endless debates on whether you should grill skin side up or down first. I normally go skin side down first and keep it there for most of the cook before flipping toward the end but Ive heard people getting good results the other way, too, so do what works best for you. For ovens, I just keep it skin side up all the way.
