Make the Chipotle Lime Crema:

Stir the ingredients for the chipotle lime sauce together in a bowl until everything is well-combined. Taste the sauce for flavor and add more adobo sauce, lime juice, or sea salt to your personal taste.

I love, love, love seafood – especially shrimp and salmon – it’s always my go-to choice at any restaurant. The flavor of seafood is great of course, but I also like how quickly it cooks up, which makes it such a great weeknight meal option. I try to schedule seafood once a week on our menu plan – it’s healthy and quick, but it is a bit more expensive than chicken, beans, or other protein options.

When it’s grilling season, my favorite way to cook shrimp is to thread it on skewers with some vegetables and brush it with some wonderful sauce. Surprisingly in the 6+ years of this blog, I have not added any skewer/kabob recipes. It’s surprising because I seriously do rely on them all summer long.

Let’s fix that now with this one dish meal of spicy grilled shrimp and vegetable skewers that you serve in shells with a yummy chipotle-yogurt sauce to make amazing tacos.

Chipotle Shrimp Tacos with Avocado-Mango Salsa and Lime Crema. These healthy shrimp tacos are bursting with bold flavor and fresh ingredients, and on the table in just 30 minutes.

Shrimp is a go-to protein for quick + easy weeknight meals. Like most of my shrimp recipes, this recipe makes great use of its quick cooking time and blank canvas flavor.

These succulent shrimp tacos are boldly-spiced, crowned with a cooling, creamy topping, and finished with a rich crema. The trifecta of a healthy shrimp taco made simple and weeknight-friendly.

The spice mixture includes chipotle chili powder, paprika, cumin, and garlic powder. As the recipe is written, these tacos have a good amount of kick. If you’re spice-adverse, I suggest scaling back on the chipotle powder.

The cilantro-lime crema perfectly balances and cools the spice from the shrimp, AND it doubles as a delicious taco sauce to drizzle overtop.

Tequila Lime Shrimp Tacos With Chipotle Cream

These Tequila Lime Shrimp Tacos have hints of a with tequila, citrus, lime, and added chipotle cream sauce tucked into tortillas.

Theres a funny story about these fish tacos. A Latin magazine written entirely in Spanish contacted me about 13 years ago and asked if I would create a recipe to be published in their magazine. Having never been published before, I was super excited and agreed. I created this recipe for Tequila Lime Shrimp Tacos! So I photographed them and sent along the recipe to the magazine. They published it, but I have no idea what the article said because I dont speak Spanish. Ha!

How To Make Tequila Lime Shrimp Tacos:

And finally, cook the shrimp. Heat the oil in a large skillet to medium-heat. Sauté the bell pepper and onion until slightly charred. Add the shrimp to the pan. Stir often, and cook just until the shrimp turn pink and curls up. Remove from heat.

Add a side dish of beans, a couple of handfuls of chips , and you will have a fabulous dinner. These are completely delicious.

For The Creamy Adobo Sauce:

In a small bowl add the adobo sauce from the can of chipotle peppers,

sour cream,

Mix together so that the shrimp are coated with the spices.

Heat a medium size skillet on medium heat and add olive oil.

Then add the shrimp.

Turn the shrimp as they cook until each side is lightly browned and thoroughly cooked .

Turn the heat off and transfer the shrimp on to a cutting board.

Reserve the remaining olive oil in the pan.

Cut the shrimp in half and put them in a bowl.

Then add the remaining olive oil from the pan in with the pieces of shrimp and mix together.

Warm the corn tortillas in the microwave for about 10 to 12 seconds.

Then top with the shrimp,

onion,

and the green and purple cabbage.

Drizzle the adobo sauce on top.

Serve while the tortilla is still warm,

and with a quarter piece of lime for each taco.

  • The recipe is easy and dinner can be ready in about 20 or so minutes!
  • At the original time of writing this article, the tacos themself were only 4 ingredients. Due to the discontinuation of one of the products, I had to find a solution. So the ingredient list has grown a little.
  • I have included the recipe for a Baja Cream Sauce for these tacos, but if you wanted to use a store bought version, you can do that too.

How To Make Shrimp Tacos

  • Toss thawed shrimp with oil and spices. Remove the tails to make them easier to eat in the tacos.
  • To make the sauce you want to make sure the chipotle pepper is very finely chopped. Then just mix all of the ingredients together in a bowl. You can cover and store in the fridge up to 2 days ahead.
  • To make the Mexican coleslaw mix together all of the ingredients until it is well blended and creamy. Just store in the fridge until you are ready to use. Can make this the day ahead.
  • The shrimp cooks in about 5-7 minutes in a hot skillet. Saute for about 3 minutes and then flip. Once the shrimp are pink and opaque they are cooked. Serve everything on flour or corn tortillas.

Tacos are such an easy dinner to make on busy weeknights, or when you want something different. Using shrimp mixes up taco night and even makes them healthier. So stock up next time it is on sale and you can make these any night of the week. You can thaw shrimp under cold water in just minutes, so it is even great for last minute dinners when you dont have anything planned.

How To Make Baja Shrimp Tacos At Home:

  • Set up a workstation. The step that takes the longest is the shrimp. So toss the shrimp in a splash of buttermilk with some salt. Then, place the flour with the seasonings in one dish, the rest of the buttermilk in another dish, and the panko in the third dish. Youre going to drain the shrimp from the buttermilk, toss it in flour, then buttermilk, and finally the panko. Place them on a clean sheet pan at the end so you can fry them all at the same time towards the end.
  • Make the sauce and saute the veggies. To make the chipotle mayo, all you have to do is blend the buttermilk chipotle peppers and adobo sauce until smooth. Then, add the mayo and continue to pulse the food processor until the ingredients combine. Dont overmix though otherwise, the sauce will become too thin. To saute the veggies, melt the butter in a skillet, add the carrots and cabbage and saute until al-dente. You can let them go longer if you usually prefer them on the softer side.
  • Fry the shrimp. Heat the frying oil in a cast-iron skillet. When the oil comes up to 350ºF, add the shrimp in batches and fry them for roughly 2-3 minutes total, flipping them halfway. I like to drain them in a sheet pan lined with a paper towel to soak up excess oil!

    The weather is finally starting to get warmer and there is something about warmer weather that makes me crave light, fresh meals. This recipe always fits that bill with a quick marinade for shrimp that is immediately grilled and then topped with fresh salad, pico de gallo and a really good creamy chipotle sauce . Served on a soft shell taco with a side salad or some tortillas and guacamole, youll feel ready for summer when eating this.

    Options, Tips and Substitutions!

  • I used frozen large, peeled and deveined shrimp, but you could use any size shrimp or also use fresh shrimp.
  • Shrimp grill very fast. They only need 2-3 minutes per side. While Im always tempted to multi-task while food is cooking, I have to make sure I dont stray too far away because they can be easy to overcook leaving your shrimp tough and rubbery. As soon as shrimp are pink and no longer translucent, they are fully cooked.
  • I took a short cut to save time with pre-made Pico De Gallo. If you prefer, you could make from scratch with chopped tomatoes, onion, lemon, garlic and your choice of spices like cilantro.
  • My chopped salad was a mix of Romain lettuce, shredded green cabbage, shredded carrots, green onion and cilantro. It was a southwest chopped salad and I liked all the variety it added. You could use any plan lettuce or find a similar mixed bag of lettuce. I always have extra lettuce that I can make a side salad to serve alongside this.
  • Season And Saut Shrimp

    Pat shrimp dry with a paper towel and place in a large bowl. Add olive oil, shallots, chipotle chili powder, smoked paprika, cumin, garlic powder, and salt mix to combine. Let stand for 10 minutes.

    Heat a large skillet over medium-high. Once hot, add shrimp mixture and arrange in a single layer. Cook for 2 to 3 minutes per side, until the shrimp is no longer opaque. Transfer to a clean bowl or plate.
