In keeping with our monthly theme, this sauce is completely free of nightshades. This being said, if you tolerate them well and would like to add a pinch of cayenne, feel free to do so!
Also, Im not including spices in this list. You can see those in the recipe card below. Dont worry theyre all basic, nightshade free spices.
- Cauliflower Youll be boiling the cauliflower to soften it, but if youd like to use frozen cauliflower florets, just microwave them instead. The idea is to soften the florets enough to make them easier to puree in the food processor.
- Onion Yellow or white onion will work just fine. If youre not a fan of onion or you dont tolerate it well, you can leave it out.
- Broth or Stock Obviously, vegetable broth is the best option, but if you dont need a vegan option, chicken works fine too.
- Coconut milk/cream This mimics dairy heavy whipping cream perfectly. Otherwise, you can always use any non dairy milk or cream of your choice.
- Nutritional yeast These little yellow flakes pack a big punch of nutty, cheesy flavor! So naturally, nutritional yeast is perfect for making a vegan and dairy free cauliflower alfredo sauce.If keeping the recipe dairy free and vegan isnt important to you, feel free to use grated or shaved Parmesan cheese instead.

Nutritional Yeast – I’m not a fan personally, but if you are, you can add it to this sauce for some extra “cheesy” flavor. If you add it, I would stick with about ¼-1/3 of a cup.
Add Vegetables – I am a huge fan of adding things like sauteed mushrooms, spinach, kale, and even broccoli to alfredo. Feel free to add what you like.
Want more spice? Add in a bit of your favorite Italian seasoning for a bit more flare. You can even add a bit of cajun spice to make turn this into a cajun alfredo.

I think creamy pastas might be one of the first things you miss when you switch to a dairy free diet. Personally, the only thing I miss more is cheese itself.
For a while, we were making lactose free Alfredo sauce which is really just a creamy, garlic sauce using lactose-free milk. When we went fully dairy free, I just tried not to think about it, but, eventually, I found myself craving creamy, garlicky pasta.
I made a few different versions with store-bought vegan cream cheese. They were definitely good, but since I try really hard not to rely solely on those kinds of products, I didnt want to make it very often.

You sure can! After you cook the vegan pasta sauce, allow it to cool completely. Pour the leftover sauce into freezer-safe containers or bags. Seal and leave in the freezer for up to 6 months.
When ready to use, simply transfer the sauce from the freezer to the fridge to thaw 24 hours before cooking with it. If you want to defrost your healthy alfredo sauce faster, place the sealed freezer bag in a bowl of warm water on your countertop until thawed.

- If you are short on time or forgot to soak the cashews, you can boil them instead. Place cashews in a pot, cover with water and boil for 10 minutes or so. Continue with the recipe as written.
- The vegan cashew sauce tends to thicken in the fridge and sometimes when cooking. If it’s the case, simply add a bit more water to thin it out as needed.
- If you already made my cashew cream, simply add it to the blender with the rest of the sauce ingredients .

- You can add spices to change the flavor. Think curry powder, some smoked paprika or chipotle, maybe even some honey and a teaspoon of mustard if you want a dairy-free sauce to go with your grilled chicken.
The Secret To The Sauce
The secret to making this sauce the perfect texture is tapioca starch . The tapioca starch thickens the sauce giving it a stretchy cheese texture that stays consistent even after it starts to cool down.
*You can use corn starch, arrowroot, or potato starch instead of the tapioca starch, for a similar effect, but nothing matches the stretchy constancy of the tapioca starch. The other types of starch will also thicken and get gloppy once the sauce cools, whereas the tapioca starch will maintain its constancy even after the dish cools down.
I learned the miracles of tapioca starch when perfecting my stretchy vegan grilled cheese recipe. It is the secret ingredient that makes my cheese recipe stretch.

What Can I Add To Jarred Alfredo Sauce
To the jar add at least 3 additions to the store bought sauce to give it a fresher taste.
