What Is Teriyaki Sauce Made Of

Teriyaki sauce is popular all around the world with its savory-salty-sweet flavor with lots of umami undertones.

Traditionally from Japan its main ingredients are soy sauce, mirin and sake with a few pinches of sugar and ginger in some cases.

But many people add a significant amount of brown sugar or honey, garlic, ginger, pineapple juice and sesame seeds to their teriyaki sauce.

This variation actually hails from Hawaii where Japanese immigrants introduced the concept, locals mixed in their local addition of pineapples and began using it as a marinade and sauce on chicken and pork especially.

For gluten-free or low sodium diets, replace the soy sauce.

  • Tamari and coconut aminos have very similar flavors and would work well in this recipe. In fact, these two substitutes are lower in sodium and taste slightly more sweet.
  • So whatever your preferences are, regardless of your gluten tolerance, feel free to use your favorite option.

Be sure to use cold water and mix the cornstarch separately from the sauce.

  • Never add cornstarch to the sauce before mixing it in cold water first. It seems like an unnecessary step, but its vital to the consistency of the final result.
  • If not mixed properly, it will cause lumps full of undissolved cornstarch in the sauce.

If your sauce becomes too thick, add water.

  • Start small. Add a tablespoon at a time until it reaches the desired consistency.

Use this sauce in any cooking process.

  • Teriyaki sauce is great for cooking things on the grill or under the broiler, but it also works really well in a stir-fry or a slow cooker meal.

Creating your own asian sauce from scratch is easy once you understand the types of ingredients you need. Once you understand this you can mix and match within reason with what you have on hand!

  • Salty base: soy sauce, tamari or liquid aminos. Thinned with water to tame the salt overwhelm.
  • Sweetness: traditionally mirin and sake but in our recipe we sweeten with honey and crushed pineapple. Substitute: white sugar, brown sugar, or a sweet wine.
  • Acidity: traditionally sake adds some acidity, but in our recipe rice wine vinegar and pineapple juice. Substitute: orange juice, red wine vinegar, white wine vinegar or apple cider vinegar. Even if you are making the base recipe its best to add the acidity in if you can in some fashion, its really not well balanced without it.
  • Thickener: you can boil it down to thicken or cornstarch creates a beautiful shiny glaze. Substitute: flour, potato starch or arrowroot powder.
  • Aromatics: ginger and garlic add amazing depth to the recipe. Substitute: finely minced shallots, finely minced onion, dried ginger and garlic powder
  • Garnish: sesame seeds add visual interest and a crunch that is delightful. A small dash of sesame seed oil is also lovely

While each substitution is not perfect, the ratio and balance is super important to create something edible. Start with our ratios and then tweak to adjust with what you have on hand!

How To Make Teriyaki Sauce

Youre not going to believe how easy this Teriyaki Sauce comes together!

Start with a small to medium saucepan over medium-high heat. Add the soy sauce, pineapple juice, brown sugar, worcestershire sauce, garlic powder, onion powder, and ginger and whisk to combine.

Whisk the mixture occasionally, and bring to a boil. Be sure to keep an eye on it so that it doesnt burn, but it should come to a boil fairly quickly.

Meanwhile, in a small bowl or measuring cup, whisk together the water and cornstarch until smooth. Slowly whisk into Teriyaki Sauce until sauce thickens.

This Teriyaki Sauce is not SUPER thick but does thicken a bit when it cools. You can add a bit more cornstarch and water if you want it REALLY thick.

I love making a big batch of this teriyaki sauce and putting in mason jars in the fridge to use throughout the week. My kids love making their own fried rice with whatever we have around.

I never ever buy teriyaki marinade or sauce at the grocery store. 1) it is so easy to make 2) the homemade version tastes way better 3) I know exactly whats in it 4) its definitely cheaper 5) it uses standard pantry items 6) it is so easy to makewait I said that already. It is so easy to make, it is easier then going to the store and buying it!

I use the marinade for several recipes , its a natural with chicken, pork, steak and even my Maui Wowie burgers. To turn it into a sauce just add some cornstarch, heat it up and like magic, it is transformed! I promise youll use this recipe over and over.

The Many Uses Of Teriyaki Sauce

Because of the addition of acidic pineapple juice, this fruit-based teriyaki sauce is an excellent marinade for beef. We use it with flank steak, shoulder steak and London broil. But as a marinade, this teriyaki also works with chicken, turkey tenderloins or even pork loin.

However, this tangy sauce also works well with oily fish like salmon our trout. Instead of marinating the fish, use a pastry brush to brush the fillets liberally with the marinade before grilling or broiling.

And, if youre ready to go the non-traditional route, try brushing this addictive sauce on eggplant, bell peppers, tofu steaks or even pineapple rings and honeydew melon slices before grilling.

This versatile teriyaki sauce is also great for stir-frying. Just follow the instructions below for the stir-fry variation which calls for cornstarch and no oil.

How To Make It

  • Add the coconut aminos and pineapple juice to a small saucepan over medium heat and allow to simmer. Simmer the sauce for 10 minutes.
  • Dissolve the corn starch in a small bowl with 2 tbsp cold water. When fully dissolved, mix into the simmering sauce. Continue to stir for 2 minutes as the sauce thickens, then remove from heat and allow to fully cool. When cool, store in an airtight container in the fridge. The sauce will keep for a few weeks in the fridge!
  • Note on thickening:

    To omit the cornstarch or arrowroot powder, simply continue swimming the sauce for about 10 more minutes to let the sauce naturally thicken on its own.
