But did you know that chipotles start from the same jalapenos that you find in your garden? Chipotle peppers are smoked and dried jalapenos more specifically red jalapenos. As those green jalapenos ripen, they will turn a bright red color. This is the perfect time to pick them and fire up your smoker.

Now that you have your own chipotle peppers, what do you do with them? The most popular use is to make and store them in adobo sauce. Then they can easily be added to soups and sauces to add that unique combination of smoky flavor with peppery heat to almost any dish.

This recipe will take you step by step on how to preserve your own chipotle peppers in this classic sauce and yes, without all the salt, preservatives, and high fructose corn syrup that can be found in the grocery store varieties. And of course, we all know that homemade tastes even better!

Can I Freeze Leftover Chicken Tinga

Yes, you can. Any cooked chicken tinga leftovers can be placed in the freezer and used later. It would be good for up to 3 months.

If you want to freeze uncooked tinga, I would make the salsa in the blender separately, freeze, then just cook the chicken on the day you want to serve it. Another option would be to make it quickly with roasted chicken.

I would not add the onions to the blender as the beauty of this dish is the texture of sliced onions and chicken mixed with the salsa.

My family, especially Joe and Josh splash a little Tabasco on everything. My pantry is full of Tabascos original sauce, green pepper sauce and chipotle sauce. It feels like Im replacing bottles every other week so I decided to try my hand at making some sauce from scratch and see if it would pass the taste test of my most critical judges. I looked at the ingredients listed on the Chipotle Tabasco sauce bottle and started there. The amounts were up to me to decipher and as I kept measuring and tasting I finally came up with a pretty good match. Its a little thicker and slightly less vinegary as the original but its hard to tell the difference when tasting them side by side.

Youll need a can of Chipotles en Adobo sauce, some water, vinegar, salt, sugar, onion and garlic powder.

You can either use a hand emulsion blender or place the ingredients into a traditional blender.

If using an emulsion blender, place the chipotles en adobo sauce into a deep mixing bowl. Begin pulsing to break apart the chiles.

Keep blending until all the chiles are crushed and blended together.

I added 1/4 cup water to thin it. If you want a thinner sauce you could add a little more. I wasnt so much worried about the thickness of the sauce as I was about taste.

Next I added 1/2 teaspoon each of garlic powder and onion powder.

I added 1/2 teaspoon sugar and 1 teaspoon salt. Mix well after each addition.

And you are left with a smoky spicy sauce!

How Spicy Are Chipotle Peppers

On the Scoville scale, chipotle peppers are the same overall range as jalapeños: 2,500 to 8,000 Scoville heat units. But expect the heat to be in the higher level of that Scoville heat range. Chipotle are made from ripe red jalapeños, so the capsaicin in them is at its peak as they remained longer on the vine prior to picking. Capsaicin is what gives chilies their heat, so expect a higher overall median heat from chipotle compared to unripened fresh green jalapeños.

Compared to an ancho another popular dried pepper made from fresh poblanos, the chipotle is a significant step up. Anchos range from 1,000 to 1,500 SHU, so they are at least three times milder, if not more.

When compared to other chilies on the Scoville scale, the chipotle, though, is only moderately spicy. It has a more eatable level of heat than the cayenne pepper that it often sits next to on the spice rack. And compared to higher-heat fresh or dried habanero and ghost peppers , the chipotle pepper falls well below in overall spiciness.

How To Make Chipotle Hot Sauce

Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.

If youre new to chipotles in adobo heres what they look like out of the can:

These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?

Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.

Im in the habit of scraping out most of the seeds as they tend to harden over time.

So well do that with seven of these chipotles and add them to a blender along with:

1/4 small onion1/4 teaspoon cuminpinch of salt

I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:

Once everything is in the blender give it a good whirl.

Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.

Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!

Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

How To Make Chipotle Chicken

  • Season and Cook the Chicken. Season the chicken breasts with salt and pepper, and then heat some olive oil in a large skillet set over medium-high heat. Add chicken to the hot oil, and cook for about 5 to 6 minutes per side, or until cooked through. Remove the chicken from the pan and set aside.
  • Saute the Aromatics and Add the Chicken Broth. Set the skillet back over medium-high heat, and add in the rest of the oil. Stir in the chopped shallots and garlic, and cook for 1 minute. Then add the chicken broth stir and scrape up all the browned bits from the bottom of the skillet.
  • Reduce the Sauce and Add the Cream and Butter. Bring the sauce to a boil. Allow the sauce to boil, gently, for 10 minutes, or until liquid is reduced to about 1/3 cup. Then reduce the heat and whisk in the heavy cream, followed by the butter cubes, one at a time. Whisk well after every cube of butter so that it incorporates completely into the sauce.
  • Flavor the Sauce and Add the Chicken. Now that the sauce is almost done, stir in the tablespoon of chopped fresh cilantro, the chopped chipotle pepper, and adobo sauce . Taste the sauce for salt and pepper, and adjust accordingly. When the sauce is complete, add the chicken breasts back into the pan. Remove from the heat, garnish, and serve with lime wedges.

    When I first started fermenting food and drinks at home, I was most excited about developing my own fermented hot sauce recipe. Matt loves to add hot sauce to just about everything and I love it on most things, so I knew this would be something we would be reaching for on a daily basis.
