Ziangs: Kecap Manis recipe – Sweet Soy Sauce [STREET FOOD Series]

Indonesian sweet soy sauce aka kecap manis is one of my most used sauces besides soy sauce and oyster sauce. These 3 sauces are a staple in my everyday Asian dishes. Stir fry, noodles, fried riceand believe it or not, my own concoction of Chinese stew .

Sowhats the difference between soy sauce and kecap manis?

The obvious difference is soy sauce is salty and with a consistency of water whereas kecap manis is sweeter and has the consistency resembling maple syrup. I use light soy sauce in replacement of salt and kecap manis for color and the sweetness, of course. I like to use these two sauces together to balance the savouriness and sweetness in my Asian dishes.

Im aware not everyone has a bottle of kecap manis in their kitchens and may not feel like getting a whole bottle for an one-off recipe or you simply want the satisfaction of making sauces at home.

Either way, I thought you may be interested to make this at home since its neither a difficult nor an expensive exercise. Enjoy!

Lee Kum Kee Premium Dark

Moving inland from the islands of Japan to China, we have this delicious soy sauce from Lee Kum Kee.

If youre not interested in springing for the gourmet bottle, this is an excellent alternative with a friendlier price tag.

The manufacturer doesnt provide many details about their product, stating simply that they have used selected soybeans in their brew and that they have adhered to traditional methods in order to make it.

This is excellent for cooking or for adding a little flavor to your rice, salads or anything other bland dish that needs a little zap of flavor.

The difference between Lee Kum Kee and Kikkoman is night and day. We would choose this any day over Kikkoman!

How To Use It

If you cook Indonesian food often, kicap manis is a must-have in your pantry as it’s an important ingredient in Indonesian cuisine. It is used in most of their recipes, from braising meat, to marinades for grilled food and stir-frying noodles such as bihun goreng. There is even a sambal kicap

Adding kecap manis to food serves 3 purposes:

  • to add a sweet, slightly salty taste with an overtone of molasses and sometimes smoke
  • to add a rich umami flavor
  • to create a dark color, to make the dish look more appetising

    Bottle Size And Storage

    Soy sauce will last a long time unopened. The best-by date on the bottle should be a good year to two years out. But oxygen is its enemy, so youre better off choosing a smaller bottle over the giant tin, Young said.

    We accidentally purchased a mushroom dark soy sauce once because the regular premium dark soy sauce from Lee Kum Kee was sold out. Alex ended up tossing the bottle once he discovered it tasted bitter and like chemicals.

    Be careful when you see mushroom dark soy sauce or seafood dark soy sauce. Unless you know for certain you are looking for mushroom dark soy sauce, stick to the regular version.

    This is one deliciously versatile sauce!

    It is a central ingredient in the national dish of Indonesia, nasi goreng , as well as mie goreng . Its also commonly used in satays.
