Low Acid Tomato Sauce Needs A Boost Of Acid To Be Considered Safe For Water Bath Canning

Spaghetti Sauce Canning the Easy Way

Low acid tomato sauce needs a boost of acid to be considered safe for water bath canning.

As the last of the seasons big tomato crops roll in, you may be contemplating the many wonderful ways in which to preserve the harvest for use during the long winter months ahead. You may recall a time when your grandmother would pull out a yellowing scrap of paper on which a generations-old family recipe for the “best spaghetti sauce”ever was scrawled in faded ink. Banishing the troops from the kitchen, shed spend a long day whipping up gallons of the stuff, filling gleaming Mason jars and dropping them into a water bath to process.

Youve got the recipe. Youve got the tomatoes. Its time to carry on that long-standing family tradition of canning that coveted sauce just like Grandma did.

Thing is, you probably cant. At least not in the same way.

Times have changed and so, it turns out, has the tomato. Historically, the tomato was considered to be a high acid vegetable. Acidity is essential for safe water bath canning. Because boiling water doesnt get hot enough to kill some of the bacteria in canned produce, we rely on that acid content to get the job done.

Can You Overcook Spaghetti Sauce

Be careful not to overcook. Since some tomato sauces are ruined by overcooking, always reheat to hot, but take care not to continue cooking the sauce. If you are using fresh tomatoes in your recipe, taste before buying. Over 300 elements create the taste of a tomato.

  • Starting with freshly sterilized jars, put two tablespoon of lemon juice in each jar.
  • Transfer the spaghetti sauce to each jar, leaving about ½ inch of space at the top.
  • Wipe the tops clean and screw on the lids. Place jars into water bath canner. Once all jars are inside the canner, fill with enough water to cover at least two inches of water over the top of the jars. Boil the jars for about 40 minutes.
  • At the end of the 40 minutes, gently remove the jars using the jar lifter and set them on a counter with a towel covering it. Allow them to cool for at least 12 hours undisturbed. Inspect the lids to ensure they all sealed. The lid should not flex up and down when the center is pressed.
  • Label and store in a cool, dark place.
  • Canned spaghetti sauce stays good at room temperature, as long as the lid properly sealed for up to a year.

Dried seasonings can be adjusted to taste. We are not big oregano fans, but we love basil. Ive been known to just leave oregano out at times.

We like a bit of sweetness to our sauce, so I go with the 1/2 cup sugar.

You can also add up to 1 pound of fresh, sliced mushrooms. You can use either peppers or celery or a combination of both. Just keep it to 1 cup total, NOT 1 cup each.

Caution! Do not increase the portions of onions, peppers, or mushrooms.

Using Canned Tomatoes For Pasta Sauce

For this post, I made reference to the tomato sauce cans because Ive always been curious when at the grocery store what kind of tomato product to use for sauce. Maybe you have too. Crushed tomatoes? Tomato sauce? Tomato paste? . Canned whole tomatoes? Diced tomatoes?

While different people will have different opinions, it comes down to two things: quality ingredients which impacts flavor, and desired consistency. Ive made sauce with all variations and all turned out great.

But with canned tomato sauce, you typically get a sauce already in the making. Meaning tomatoes arent the only ingredient and theyve given you a head start.

For example, heres the ingredients list on the cans I used which I got at Aldis.

It includes sugar and red peppers as additional ingredients.

Most likely the added sugar and peppers are to add the needed sweetness for the sauce. If youve ever made a sauce using tomato paste you have to add sugar otherwise it tastes bitter and unpleasant. So with the tomato sauce thats all taken care of you.

But its not a pasta sauce. yet. So without further adieu, lets get started. Heres the recipe and ingredients below. Enjoy!!!
