The sauce should stay good in your refrigerator for 5-7 days and the flavor will intensify as it refrigerates. For that reason, I used minced garlic from a jar rather than fresh. I find that fresh garlic leaves me with the most unbearable breath for a good 24 hrs no matter how many times I brush and gargle with mouthwash. Garlic from a jar is a little more subtle.

Making Authentic Greek Tzatziki (Yogurt Garlic Dip/Sauce)

Another super simple recipe for you!

In a small bowl, stir together plain Greek yogurt, peeled and diced cucumber, minced garlic, fresh lemon juice and fresh dill. Season with salt and pepper.

For the cucumber, I prefer to use mini cucumbers or an English cucumbers because theyre essentially seedless. If you use a regular cucumber, youll want to remove the seeds. For this sauce I diced the cucumber, but you can also grate it for a finer more authentic texture. Grating cucumber does cause the cucumber to release more liquid so youll want to place the grated cucumber in a mesh strainer and squeeze as much liquid out as possible before adding it with the other ingredients.

You can also blend all of the ingredients in a food processor if you prefer a creamier sauce.

    How Long Does Tzatziki Last

While it is best to enjoy tzatziki fresh, it will typically last for 3-5 days in the fridge. To extend its shelf life, make sure to keep it tightly sealed in an airtight container. When stored properly, tzatziki can be enjoyed for up to a week.

While tzatziki is delicious and easy to make, there are a few things to keep in mind to ensure that it lasts as long as possible. First, be sure to use fresh ingredients. Cucumbers, in particular, should be crisp and free of blemishes. Second, make sure to strain the yogurt before adding it to the other ingredients. This will help to remove any excess water and prevent the tzatziki from becoming too runny. Finally, be sure to add plenty of garlic and olive oil. These flavorful ingredients will not only enhance the taste of the tzatziki but also help to preserve it. With these tips in mind, you can enjoy delicious tzatziki for days to come.

    How To Make It Thicker

Although Greek yogurt is thicker than regular yogurt, you can strain it for an even thicker sauce or dip. To do so, simply place a few layers of cheesecloth in a fine-mesh strainer set over a bowl, add the Greek yogurt, cover with the ends of the cheesecloth and set in your fridge. Allow it to strain for at least 1 hour and up to overnight.

Note that the longer you allow the Greek yogurt to strain, the thicker it will become.

Straining the cucumber prior to mixing into the yogurt sauce also produces a thicker tzatziki.

How To Make Authentic Greek Tzatziki Sauce

There are two important steps in the preparation that make all the difference with this homemade tzatziki recipe.

The first is to make sure you get the cucumber as dry as possible. Whether you wring the cucumber out by hand, or let it drain in the refrigerator overnight, this step is very important.

The drier your cucumber is, the better the texture of the sauce will be.

The second is to let the yogurt, garlic, lemon juice, olive oil, and salt marinade together in the fridge before mixing in the dill and cucumber. If you add the dill in too early, the dip will be overpowered by its flavor.

Let the yogurt and garlic meld together for a minimum of 5 minutes, 1 hour if you can spare it, and overnight or 6 8 hours if you want the best results. This allows the flavors to really combine beautifully and gives the garlic a chance to lose its spiciness.
