NOTE: Most chipotle sauce recipes youll find on the internet are heavier on creaminess and less spicy hence you see lighter color with just a tinge of chipotle peppers. I feel thats lacking the real chipotle smokey flavor. Mine is focused on chipotle peppers, super smokey, super spicy with little creaminess.

Creamy Chipotle Sauce Recipe

Wash them and dry them off. You can remove the stems if you like, but I prefer to leave them on like little handles.

Lay them out on a rack that will fit inside your smoker and set your smoker for 200°F.

For the wood chips or pellets, pecan is the traditional Mexican wood, but I also like to use a mild, fruity wood like apple or cherry. Hickory or oak work well too, if you dont have the others.

You will be smoking for these 3 hours, so plan accordingly. In other words, be sure you have enough wood or pellets!

After the smoking process is complete and you want to store these as dried chipotle peppers, then youll need to dry these completely. Using a dehydrator works best, but 10 hours in an oven set at its lowest temperature, or 200°F, will do.

Store in an airtight container or grind for chipotle powder.

When I make this sauce, I like to make a big batch that I can enjoy throughout the week. I find that homemade sauces and salad dressings hold up best when stored in a glass container or jar, so try to opt for one of these if you can.

To store this sauce, simply transfer it into an airtight container and it will keep in the fridge for up to one week. I wouldnt recommend freezing it, as dairy-based sauces usually wind up clumpy when thawed out.

  • To freeze them whole: Spread the peppers out on a parchment paper lined baking sheet and flash freeze for 1-2 hours until solid. Once solid, cut the parchment wrap apart, individually wrap each pepper, then store in a freezer safe bag for up to 3 months.
  • To freeze chipotle peppers by the tablespoon: Spread parchment paper out on a baking sheet or line an ice tray with plastic wrap. Next, mince the chipotle peppers without the sauce, , and plop them onto the parchment in 1 tablespoon increments a few inches apart or place them in each ice cube compartment. Flash freeze for 1-2 hours until solid, then cut the parchment/plastic wrap apart, individually wrap each tablespoon, and store in a freezer safe bag for up to 3 months.
  • To freeze adobo sauce: Freeze the sauce with the chipotle peppers or freeze it separately in 1 teaspoon increments because it is super potent!

Chipotle Peppers In Adobe Sauce

Ingredients:

12 dehydrated chipotle peppersBoiling water to cover chilies1 cup of ketchup or tomato puree with 1 tsp. sweetner ½ cup water1 medium white or yellow onion thinly sliced4 large garlic cloves peeled and smashed½ cup cider or white vinegar½ tsp. salt

Instructions:

1. Thoroughly wash the chipotle peppers, remove the stems and place them in a bowl. Cover them with boiling water and weigh them down with a small lid or plate. Let them soak for 20 minutes.

2. Remove 4 soaked chipotles, leaving the rest in the soaking liquid, and place them in a food processor or blender. Add the ketchup and half cup water. Blend until you have a uniform paste.

3. Add the blended chipotles and tomatoes into the pot with the remaining chipotles soaked in water.

4. Add the onions, garlic, salt, peppercorns and vinegar to the pan. Mix well.

5. Bring it to a boil, reduce the heat and allow chipotles to simmer for about 1 hour and 45 minutes. Check them at one hour. If the sauce has dried too much, add extra water as needed.

6. Place the chipotles and adobo in sterilized freezer safe containers. Hint keep the containers small most recipes only call for 2 peppers and a small amount of sauce. You can also puree and freeze them in ice cube trays for future use. Once you open your jar be sure to use it within a month.
