Whats The Difference Between Red And Green Jalapeos

How to make a creamy chipotle sauce from scratch

They are the same pepper, its just that a green jalapeño is picked early before it ripens on the vine, while a red jalapeño is left on the vine longer. Like other chilies that turn red it is older. The red ripened are best to use for smoking, but the green are fine, too.

Im sure making chipotle peppers all started as a way to preserve bumper crops of jalapeños back in the day.

Why I Love This Recipe

  • Youll need only 5 minutes and a blender.
  • It is a little creamy and super spicy with smokey flavors .
  • Very forgiving recipe and easy to customize. E.g. you can make more creamy, less spicy. See the details on how to do it in the tips section below.
  • A very versatile dipping or topping sauce. See the serving ideas below.
  • Because of its bold flavors, it can jazz up your boring meal into something delicious, mouthwatering.

NOTE: Most chipotle sauce recipes youll find on the internet are heavier on creaminess and less spicy hence you see lighter color with just a tinge of chipotle peppers. I feel thats lacking the real chipotle smokey flavor. Mine is focused on chipotle peppers, super smokey, super spicy with little creaminess.

Wash them and dry them off. You can remove the stems if you like, but I prefer to leave them on like little handles.

Lay them out on a rack that will fit inside your smoker and set your smoker for 200°F.

For the wood chips or pellets, pecan is the traditional Mexican wood, but I also like to use a mild, fruity wood like apple or cherry. Hickory or oak work well too, if you dont have the others.

You will be smoking for these 3 hours, so plan accordingly. In other words, be sure you have enough wood or pellets!

After the smoking process is complete and you want to store these as dried chipotle peppers, then youll need to dry these completely. Using a dehydrator works best, but 10 hours in an oven set at its lowest temperature, or 200°F, will do.

Store in an airtight container or grind for chipotle powder.

This is what they look like fresh from the smoker!

Best Chipotle Sauce: Top 10 List

Choosing the appropriate chipotle sauce can be tough. However, if you consider these factors, your job will be easier. These factors will be discussed:

  • Product Quality: One of the most important factors to consider when purchasing a product is its quality. Nobody would want a low-quality or easily worn-out object. They are even willing to spend a somewhat greater price for a good product.
  • Sturdiness: Reliability and durability are inextricably linked. Because it is tough and resilient, your chipotle sauce will last you for many months.
  • Product availability: New items are frequently introduced to replace outdated products. This new product has most likely been updated in some way and may thus have new features.
  • Seller’s Rank: Don’t you find it fascinating? You must have an excellent product, be known, and grow. These are both significant objectives. The product is successful based on its growing user base. Because more people are purchasing things, producers must provide better after-sales service and quality.
  • Customer Feedback: You will not be held liable for things that went wrong with previous clients, will you? If you see higher ratings, you can rely on these.

How To Store Homemade Sauce

When I make this sauce, I like to make a big batch that I can enjoy throughout the week. I find that homemade sauces and salad dressings hold up best when stored in a glass container or jar, so try to opt for one of these if you can.

To store this sauce, simply transfer it into an airtight container and it will keep in the fridge for up to one week. I wouldnt recommend freezing it, as dairy-based sauces usually wind up clumpy when thawed out.

You Can Freeze Whole Chipotle Peppers Or In 1 Tablespoon Increments:

How to make Chipotle

  • To freeze chipotle peppers by the tablespoon: Spread parchment paper out on a baking sheet or line an ice tray with plastic wrap. Next, mince the chipotle peppers without the sauce, , and plop them onto the parchment in 1 tablespoon increments a few inches apart or place them in each ice cube compartment. Flash freeze for 1-2 hours until solid, then cut the parchment/plastic wrap apart, individually wrap each tablespoon, and store in a freezer safe bag for up to 3 months.

1. Thoroughly wash the chipotle peppers, remove the stems and place them in a bowl. Cover them with boiling water and weigh them down with a small lid or plate. Let them soak for 20 minutes.

2. Remove 4 soaked chipotles, leaving the rest in the soaking liquid, and place them in a food processor or blender. Add the ketchup and half cup water. Blend until you have a uniform paste.

3. Add the blended chipotles and tomatoes into the pot with the remaining chipotles soaked in water.

4. Add the onions, garlic, salt, peppercorns and vinegar to the pan. Mix well.

5. Bring it to a boil, reduce the heat and allow chipotles to simmer for about 1 hour and 45 minutes. Check them at one hour. If the sauce has dried too much, add extra water as needed.

6. Place the chipotles and adobo in sterilized freezer safe containers. Hint keep the containers small most recipes only call for 2 peppers and a small amount of sauce. You can also puree and freeze them in ice cube trays for future use. Once you open your jar be sure to use it within a month.

What Is Chipotle Sauce Made Of

This sauce utilizes the entire can of chipotles in adobo: both the whole chipotles and their sauce. Sour cream brings a cool, creamy component, while a bit of mayonnaise adds some tang. Just a touch of maple syrup balances out the heat with a little sweetness, while lime and garlic provide acidity and flavor. And although its perhaps unexpected, a touch of soy sauce is added here to lend a deeper, saltier flavor and overall umami.

What Is A Chipotle Pepper

Chipotle peppers are basically ripened jalapeño chiles that have been smoked and dried. They can be ground and used in many Mexican and Tex Mex cooking and are typically sold in a rich, smokey flavored adobo sauce.

The best thing to do is grab about 20 fresh jalapeños and allow them to ripen and turn red. I leave them out in a bowl uncovered near a window.
