What Can Be Used Instead Of Oyster Sauce
While there really is nothing quite like oyster sauce out there, if your local supermarket is fresh out of the good stuff and youre in a bind, choose your own adventure:
Does Oyster Sauce And Fish Sauce The Same
No is the answer one. The oyster sauce is made from oyster juice. For the brown color of sauce, the producer simmer the juice with water and sugar until caramelized. Additional condiments like soy sauce can be used to deepen the flavor. Cornstarch can also be used to help the sauce skin thicken. However, fish sauce is made from fish that have been fermented and the color is reddish brown. Another difference is the skin of oyster sauce paste is thicker and sweeter.
Crisping Up The Noodles
- Before you fry the noodles, you need to soften them up a little. If you are using pre-steamed chow mein, then either run very hot tap water over the noodles for 1-2 minutes to soften them. Alternatively, you can also soak it in a hot bowl of water for 1 minute as well.
- To crisp up the chow mein, you will essentially have to deep fry it in a frying pan. You dont need anything special for this step except oil and your softened noodles. Depending on how thick your pan/wok is you may need to adjust your heat accordingly. For thinner pans like a wok I usually set my pan to medium but for thicker wall pans like a frying pan, I like to adjust the heat to medium-high.

Yet, what is this magical brown sauce? Is it actually made of, well, oysters? And how can one start deploying it at home?
For starters, oyster sauce is believed to have been invented totally by accident. In 1888 Chinese food stall operator Lee Kum Sheung left a pot of oyster soup on to simmer for so long that it cooked down into a thick brown paste. Sheung took a cheeky taste, not wanting to waste a full pot of food, and realized his caramelized concoction was rich, super savory, and perfectly delicious. So he called it oyster sauce and started serving it to his customers as a seasoning before going on to package and sell it under the now-iconic Lee Kum Kee Asian sauce empire.

Recommended to me by an Asian grocery store owner many years ago , and I have never looked back. Its got more flavour than most chilli pastes, and I use it for everything from adding a hit of spice into Stir Fries and Noodles, adding to dipping sauces for things like Pot Stickers, dolloping onto all Asian soups, into salad dressings for a dash of heat.
I am dead set loyal to it I have strayed on occasion and have been so unhappy Ive ditched almost full jars . It costs about $3 and depending on how much of a chilli fiend you are, it will last for months years! Very, very long shelf life.
